TARTINE BAKERY - LA COMMISSARY


Assistant Bread Manager (Production)


Join the iconic Tartine team and help craft some of the world’s most celebrated breads. As the Assistant Bread Manager, you’ll support the Bread Manager in leading production, training, and operations to ensure every loaf meets Tartine’s exacting standards for quality, craft, and consistency.


What You’ll Do

  • Support the Bread Manager in coordinating daily production, staffing, and schedules.
  • Act with integrity and align daily work with Tartine’s values and mission.
  • Participate hands-on in mixing, shaping, proofing, and baking to meet production goals.
  • Maintain deep knowledge of Tartine bread-making techniques, grains, flours, and fermentation methods.
  • Train and mentor bread team members to ensure consistency, growth, and adherence to Tartine standards.
  • Manage ingredient ordering and inventory, including specialty grains and flours.
  • Oversee kitchen cleanliness, organization, and compliance with health and safety regulations.
  • Support labor planning, scheduling, and payroll processing for bread staff.
  • Interview, onboard, and provide feedback to team members to foster a positive and productive work culture.
  • Collaborate with leadership to maintain quality, efficiency, and cost targets.


What You Bring

  • 3+ years of professional production bread baking experience, including at least 6 months in a leadership role.
  • Strong communication skills and the ability to lead in a collaborative, team-driven environment.
  • Inquisitive mindset with a genuine passion for bread and fermentation.
  • Organizational and problem-solving skills with attention to detail in production and quality.
  • Ability to lift up to 40 lbs and stand for long periods (up to 9 hours).
  • Commitment to Tartine’s standards of craftsmanship, cleanliness, and professionalism.
