Job Description
The Director of Bars and Restaurants role is a key component of the Food & Beverage division senior leadership and will be instrumental in driving the vison and culture of the division.
At Fairmont Hotels & Resorts, exceptional service and flavors are the hallmarks of every dining experience. Your leadership and vision as Director of Restaurants will drive outstanding operating results - and ensure our Venues are not only preferred dining destinations, but also engaging places to work.
Summary of Responsibilities:
Reporting to the Assistant Director, Food & Beverage, responsibilities and essential job functions include but are not limited to the following:
    • Consistently offer professional, friendly and engaging service.
    • Lead and manage the day-to-day operation with oversight across Fulton, Garrison, Room 725, Rules & Regs Bar and Pool Bar ensuring all service standards are followed
    • Drive innovative promotions, menus and concepts; creating a destination of choice for both hotel and external guests.
    • Work closely with other leaders and bar teams to curate wine list enhancements
    • Work closely with the Assistant Food & Beverage Director to present a profitable and visually stimulating retail display.
    • Compile monthly beverage & retail inventories and ensure achievement of budgeted cost of sale targets.
    • Lead and support the Venues in the achievement of their financial and operational targets
    • Prepare annual budgets and administer in a fiscally responsible manner
    • Implement effective control of food, beverage, labor and operating expenses
    • Assist in the preparation of the annual strategic plan and achieve the goals and targets therein
    • Ensure the implementation of standards in guest service, constantly seek out ways to improve product and service as well as increase volumes and profits
    • Oversee the selection, training and development of all Colleagues to ensure timely recruitment and career growth
    • Follow department policies, procedures and service standards
    • Actively resolve guest complaints promptly according to hotel standards
    • Actively participate in hotel committees and team meetings
    • Work closely with Marketing team to ensure the venues have constant visibility

Qualifications
To perform this job successfully, an individual must be able to perform each essential duty satisfactorily.   • Previous Food & Beverage experience in a senior leadership role required
  • At least 7-10 years of progressive leadership experience in luxury hotel food & beverage operations
  • University/College degree in a related discipline required
  • Computer literate in Microsoft Window applications required
  • Strong interpersonal and problem solving abilities
  • Highly responsible & reliable
  • Ability to work well under pressure in a fast paced environment
  • Ability to work cohesively as part of a team
  • Ability to focus attention on guest needs, remaining calm and courteous at all times
