Ensure the highest quality service and maintenance of all outlets, by managing all activities related to or impacting the Food & Beverage Division.

Essential Duties & Responsibilities:

  • Direct Division so that all efforts are focused on exceeding every customer's expectations.
  • Review and approve all employee performance reviews, providing managers with advice on terminology, consistency and any necessary follow-up action.
  • Review and approve all employee documents, personnel requisitions and leave requests.
  • Attend and oversee all employee disciplinary action beyond documented written warnings.
  • Ensure that on-going service training programs are provided, covering the menu, wine and food pairing, wine education and sales technique.
  • Ensure that employee motivational programs are implemented.
  • Chair weekly Food & Beverage meetings.
  • Represent Food & Beverage Division at all appropriate meetings.
  • Ensure timely completion of all performance reviews, monthly department meetings and safety inspections.
  • Conduct all department head performance reviews.
  • Develop a strong, well-rounded and mature management team, which upholds standards of quality and embraces creativity.
  • Review outlets sales abstracts and oversee food cost of sales monthly.
  • Complete weekly managers schedule and approve vacation and sick leave as needed.
  • Organize management vacations and schedules fairly and based upon business needs.
  • Interact with Executive Committee of The Lodge, working to improve general guest and hotel needs.
  • Inspect restaurants, banquet rooms, service and public areas daily; document and follow-up on concerns.
  • Test speed, efficiency and style of service, following up with praise or action plan.
  • Assist in marketing outlets by active involvement in image plan, promotions and menu presentation.
  • Serve as kitchen liaison, discussing issues such as food presentation, seasonal menus quals and new ideas overall and quality.
  • Coordinate and direct all F&B related activities during special events, such as the AT&T golf tournament, Concours, PB Food & Wine, US Open's.
  • Closely monitor the quality and appropriateness of all operating equipment, such as china and silver.
  • Provide input on all capital expenditures.
  • Carefully review each P&L statement, researching and reporting significant variances. Document brief summary narrative.
  • Challenge managers and staff to exceed budgeted revenues and contain costs.
  • Operate within established budget and develop future budgets with narratives.
  • Train, develop and motivate staff to meet and exceed established service standards.
  • Counsel, discipline and evaluate staff. Hire, promote and terminate staff.
  • Set policies and objectives for department. Prepare annual budget of labor and material costs.
  • Serve as manager on duty for resort, when appropriate.
  • Control labor and material costs, ensuring profitable operation.
  • Interface with all departments to ensure that guests' needs are met.
  • Be a hands-on manager.
  • Know where to be and when to be there.
  • Meet with staff weekly.
  • Serve in employee cafeteria at least 2 hours a week.
  • Attend all quarterly departmental meetings.
  • Ensure staff know and understand mission statement, values, and standards.
  • Be familiar with Forbes 4/5 star standards.
  • Knows, models and integrates PBC culture (mission, values, and standards).
  • Comply with all Pebble Beach Company safety and health policies and procedures; ensure the implementation of Company safety program.
  • Other duties as assigned by the General Manager.

Required Skills:

  • High school diploma or equivalent required and some college preferred.
  • Must be knowledgeable about all aspects of restaurant and banquet operations.
  • Excellent management, motivational and organizational skills required.
  • Knowledge of fine food, wine and other spirits necessary.

Desired Skills:

  • 5 or more years experience in hotel restaurant operation.
