Essential Duties and Responsibilities include, but are not limited to the following:
  • Inventory and evaluate all of the fish for the day to confirm that the product is as fresh as possible and that all peripheral sushi-making ingredients are available.
  • Responsible for creating an exciting visual presentation of food with an eye for artistic balance; serve dishes that are full of color and vibrancy.
  • Ability to interact with and educate diners, challenging experienced diners and being helpful and informative to new sushi eaters.
  • Responsible for maintaining a clean work station that is free of clutter, to include wiping the cutting board after each piece of fish is cut or roll is made and properly storing perishable items.
  • Responsible for cleaning and sharpening sushi knifes.
  • Maintains food standards as set forth by the Food & Beverage Director and the Brewery Executive Chef.
  • Works with the Brewery Executive Chef in the development of new sushi recipes and follows all recipes and control procedures.
  • Maintains inventory control system, purchasing, and record keeping.
  • Communicates any problems and/or concerns to the Brewery Executive Chef without delay.
  • Other duties and assignments as deemed necessary by management and/or the Brewery Executive Chef.
  • Food Safety Program and Training.

Education/Experience/Knowledge
Education Level - High School Diploma or equivalent required.
Experience - Minimum 1-year experience as a sushi chef.
Knowledge - Must have knowledge of sushi-grade fish.
Language Skills
Ability to read and interpret documents such as safety rules, operating and procedure manuals. Ability to communicate effectively with guests and other employees.
Mathematical Skills
Ability to add, subtract, multiply, and divide in all units of measure, using whole numbers, common fractions, and decimals. Ability to compute rate, ratio, and percent.
Reasoning Ability
Ability to apply common sense understanding to carry out instructions furnished in written, oral, or diagram form; ability to define problems, collect data, establish facts and draw valid conclusions.
Certificates, Licenses, Registrations
Class B Gaming License (As provided for a nominal fee with a clean background check)
Physical Demands
The physical demands described herein are representative of those that must be met by an employee to successfully perform the essential functions of this job.
  • Must be able to stand for up to 8 hours
  • Must be able to walk, maintain balance, and successfully navigate through and around a working kitchen and dining area.
  • Must be able to reach overhead with hands and arms, climb, balance, stoop, kneel, and crouch.
  • Must be able to frequently lift and/or move up to 75 pounds.
  • Specific vision abilities required include close vision, distance vision, color vision, peripheral vision, depth perception and the ability to adjust focus.

Work Environment
The employee is regularly exposed to tobacco smoke and may be exposed to loud noises and bright lights.
