Tachi is a modern omakase concept inspired by Tokyo’s standing sushi bars. We combine the precision and intimacy of traditional sushi with the energy of New York City. Our menu features a concise omakase offering centered on quality, restraint, and storytelling through sushi.

We are seeking a skilled Sushi Chef to join our opening team. This is an exciting opportunity to work closely with Chef Victor Chen and be part of an intimate, high-performing sushi counter focused on consistency, quality, and hospitality.

About Our Chef
Victor Chen, originally from China and raised in Brooklyn, began his sushi journey at New York Sushi Ko, where he was first introduced to the Edomae tradition. Over the past 15 years, he has worked in both intimate, detail-driven counters and large international hospitality groups, including Kintsugi and Aman Nama. His philosophy blends Edomae fundamentals with restraint, seasonality, and narrative—balancing precision with warmth.

As part of the team, you’ll work alongside Chef Victor, gaining direct exposure to his approach and the opportunity to grow within a thoughtful, expanding organization.

Responsibilities

  • Execute omakase service with precision, speed, and consistency
  • Prepare sushi rice, fillet fish, and manage mise en place daily
  • Maintain excellent knife technique and sanitation practices
  • Support quality control and ingredient management
  • Train and mentor junior staff and apprentices
  • Contribute ideas to improve efficiency and guest experience
