Job description

Position Summary:

The Crepe Specialist / Dosa Maker is responsible for preparing authentic South Indian dosas (savory crepes) using traditional rice and lentil batter. This role requires precision, consistency, and a strong understanding of South Indian culinary techniques.

Candidates with prior crepe-making experience are preferred; however, the company is willing to train individuals with strong crepe-making skills to transition into South Indian dosa preparation. The ideal candidate will ensure high-quality food production, maintain hygiene standards, and deliver an excellent customer dining experience.

Key Responsibilities:

Food Preparation & Cooking:

- Prepare, ferment, and maintain dosa batter using rice and lentils.

- Cook a variety of dosas including Plain Dosa, Masala Dosa, Rava Dosa, and specialty variations.

- Prepare accompaniments such as chutneys and sambar.

- Ensure consistency in taste, texture, and presentation.

- Monitor cooking temperatures and manage tawa (griddle) operations efficiently.

Kitchen Operations:

- Set up and maintain dosa station before, during, and after service.

- Manage mise en place for dosa preparation and service.

- Ensure proper storage and rotation of ingredients (FIFO method).

- Assist in inventory control and report shortages.

Quality & Hygiene Standards:

- Adhere to food safety and sanitation standards at all times.

- Maintain cleanliness of workstations, utensils, and equipment.

- Follow local health regulations and company SOPs.

- Ensure proper handling of fermented batter and perishable items.

Customer Service:

- Prepare dishes in an open kitchen or live station setting when required.

- Customize dosa orders based on customer preferences.

- Maintain a professional and friendly demeanor during service.

Required Qualifications:

- High school diploma or equivalent; culinary training preferred.

- Food Safety certification preferred.

Experience Requirements:

- Crepe-making experience preferred.

- 1–3 years of experience in crepe preparation, South Indian cuisine, or similar cooking.

- Experience with fermented batters is a plus.

Skills & Competencies:

- Strong knowledge of crepe-making techniques; willingness to learn dosa preparation.

- Attention to detail and ability to multitask.

- Good communication and teamwork skills.

Physical Requirements:
