Position: Production Lab Intern (Seasonal)
Department: Laboratory
Location: Acampo, CA
Range of Pay: $21.00 - $23.00 per hour
Schedule: Seasonal Position (June - September), including weekends and overtime as needed during harvest
Type: Temporary / Seasonal
Job Summary:
The Production Lab Intern is responsible for performing routine chemical and physical analyses throughout all stages of the winemaking process, from grape juice to finished wine. Working under the supervision of the QA/QC Lab Manager, this role supports laboratory operations, fermentation monitoring, data collection, and quality control initiatives while ensuring compliance with established laboratory procedures and safety standards.
Key Responsibilities:
• Adhere to all safety policies and procedures.
• Collect grape, juice, fermenting wine, tank, and barrel samples for laboratory analysis.
• Perform routine laboratory analyses including:
  • Brix (Sugar Content)
  • pH
  • Titratable Acidity (TA)
  • Free Sulfur Dioxide (FSO?)
  • Malic Acid
  • YAN (Yeast Assimilable Nitrogen)
  • Volatile Acidity (VA)
  • Residual Sugar (RS)
  • Additional harvest-related quality control tests
• Monitor active fermentations through daily Brix and temperature measurements.
• Maintain accurate fermentation logs and laboratory records.
• Enter analytical data into winery databases, spreadsheets, and tracking systems.
• Assist in identifying and reporting fermentation issues or unusual analytical results.
• Prepare laboratory reagents, standards, and testing solutions.
• Calibrate, clean, and maintain laboratory instruments and equipment.
• Conduct analyses according to Standard Operating Procedures (SOPs).
• Verify analytical accuracy and repeat testing when necessary.
• Maintain laboratory cleanliness, organization, and inventory of supplies and chemicals.
• Follow all laboratory sanitation and safety protocols.
• Support winemaking, cellar, and bottling operations during peak harvest activities.
• Participate in tastings and sensory evaluation activities when appropriate.
• Perform additional duties and special projects as assigned.
Qualifications:
• Prior laboratory experience is required.
• Previous experience in a wine production facility is preferred.
• Knowledge of wine production, wine chemistry, laboratory analysis techniques, viticulture, and grape varieties preferred.
• Strong attention to detail and ability to accurately record and interpret data.
• Ability to work independently and collaboratively in a professional team environment.
• Strong organizational and communication skills.
• Ability to work weekends, extended shifts, and overtime throughout the harvest season.
Work Environment:
• Laboratory and winery production environments with frequent interaction in cellar, fermentation, and bottling areas.
• Exposure to chemicals, cleaning agents, compressed gases, and varying temperatures.
• Fast-paced harvest environment requiring flexibility and adaptability.
• Extended work hours, including evenings, weekends, and overtime, may be required during harvest and peak production periods.
Physical Requirements:
• Ability to stand and walk for extended periods.
• Ability to lift and move up to 40 pounds.
• Ability to perform repetitive laboratory testing procedures.
• Frequent bending, reaching, and movement throughout laboratory and production areas.
• Occasional climbing of stairs or ladders in winery production environments.
• Ability to safely work around fermentation tanks, bottling equipment, and winery machinery.
