Job description

ESSENTIAL DUTIES AND RESPONSIBILITIES
  1. Supervises the processing and smoking departments of the USDA Inspected Plant which includes; employees, paperwork, daily production requirements and QA specifications.
  2. Responsible for the operation of the smoker
  3. Maintains clean and sanitary work areas.
  4. Responsible for all formulations and proper trim on briskets.
  5. Supervises and helps daily set-up of the processing room.
  6. Responsible for daily production according to posted schedule.
  7. Supervises all productions goals (lbs/hr) and assures correct production flow is followed.
  8. Ensures customer standards are maintained for all products.
  9. Formulates all Food Service Orders, Fresh Tray products, and Customer Specific Orders.
  10. Manages sanitation of processing areas on a daily basis.
  11. Completes all paperwork on a daily basis for all required processes.
  12. Helps maintain and control the labor costs.
  13. Helps with maintaining areas of inventory control, staffing requirements and looks for ways to improve daily business operations.
  14. Communicates with the Maintenance Department concerning issues with machinery with urgency and precision to eliminate down time and reduce overtime hours.
  15. Works closely and in conjunction with Quality Assurance.
  16. Observes safety and security standards.

QUALIFICATIONS
Education and/or Experience
Two years' of processing experience.
Food Handler Certification required.
Language Skills
Ability to listen, read, write and speak in English for all job related circumstances.
Mathematical Skills
Ability to add, subtract, multiply, and divide in all units of measure, using whole numbers, common fractions, and decimals.
Reasoning Ability
Ability to solve practical problems and deal with a variety of concrete variables in situations where only limited standardization exists.
Physical Demands
While performing the duties of this job, he/she is frequently required to stand; walk; use hands to finger, handle, or feel; and talk or hear. He/she is regularly required to reach with hands and arms. He/she must occasionally lift and/or move up to 50 pounds. Exposed to heat and cold temperatures throughout the work day.
Work Environment
The noise level in the work environment is usually moderate to loud.
