Description

Who We Are

White Lodging is hiring a Lead Line Cook to join our culinary team at Yacht Club — the signature fine dining seafood restaurant at Hotel Trinity, Autograph Collection in downtown Austin, Texas. This is a kitchen leadership role designed for an experienced line cook who is ready to take the next step toward becoming a Sous Chef. You'll step into a Sous Chef in training capacity, leading daily back-of-house (BOH) operations, mentoring junior kitchen staff, and keeping production running smoothly across a fast-paced, pre-opening hotel kitchen environment in one of Austin's most anticipated new luxury dining destinations.

If you're a senior line cook, lead cook, or chef de partie looking for Lead Line Cook jobs in Austin, Texas or pre-opening hotel kitchen roles at a Marriott Autograph Collection property, this role offers the hands-on culinary leadership experience and clear path to Sous Chef you've been looking for — backed by one of the country's top hospitality companies operating premium hotels, restaurants, and rooftop bars across the U.S.

The Yacht Club is the signature seafood restaurant at Hotel Trinity, Autograph Collection — Austin's newest luxury boutique hotel, opening late 2026 at the corner of Trinity and Fifth Streets in the heart of downtown Austin. As the only Marriott Autograph Collection hotel in the city center, Hotel Trinity is a 258-room private hideaway located next to Antone's in the historic 6th Street entertainment district. The Yacht Club anchors the hotel's ground floor, offering a refined yet approachable take on coastal cuisine — high-quality fresh seafood and oyster bar experiences complemented by thoughtful steakhouse offerings, seasonal menus, and an elevated wine and beverage program. Designed to be a destination for Austin locals and hotel guests alike, The Yacht Club pairs polished, attentive service with a lively, social energy to create one of the city's most anticipated upscale seafood dining experiences.  Hotel Trinity, launching in late 2026 as the only Marriott Autograph Collection hotel in downtown Austin, is Austin's finest private hideaway. Featuring a guest-only rooftop pool, world-class hospitality amenities with residential appointments, and the city's most sought-after high-end seafood restaurant and oyster bar, Hotel Trinity offers a luxury boutique experience unlike any other — a place to work, play, and stay out of the fray.

Enjoy flexible scheduling, easy shift swapping via our app, and a career path with real growth across multiple hotel properties in your Austin, Texas market.

What You'll Do

  • Mentor and collaborate with entry-level cooks, Line Cooks, culinary apprentices, and stewards while managing daily food preparation and production at this upscale downtown Austin hotel kitchen
  • Follow all White Lodging F&B procedures, health department regulations, and federal food safety guidelines across every shift at Yacht Club
  • Assist in maintaining food cost and labor cost standards to meet the financial targets of this high-profile Austin hotel restaurant
  • Check ingredient freshness; enforce all recipe standards, oyster bar specifications, and portion-use records consistently across the kitchen team
  • Monitor guest feedback scores and proactively influence food quality and service consistency — contributing to the reputation of Yacht Club as one of Austin's premier upscale seafood dining destinations
  • Foster a culture of cooperation, respect, and professional kitchen standards among all coworkers in this pre-opening hotel culinary team
  • Perform other duties as assigned

  • Solid working knowledge of all commercial kitchen equipment and culinary preparation techniques — required for this high-volume fine dining hotel kitchen role in Austin, TX
  • Demonstrated proficiency in sautéing, broiling, frying, roasting, butchery, garde manger, pantry, and breakfast cookery — seafood cookery and oyster bar experience a strong plus for this role at Yacht Club
  • Experience leading or mentoring kitchen staff — prior lead cook, senior line cook, or chef de partie experience strongly preferred; this is a Sous Chef in training role with a clear culinary management career path
  • Culinary degree, culinary school training, or apprenticeship preferred — not required; we will train the right candidate with the right kitchen leadership instincts
  • Ability to stand and move at a fast pace for extended periods in a high-volume pre-opening hotel kitchen environment in downtown Austin
  • Active unexpired Food Handler's Certification — required
  • Prior hotel culinary experience preferred — experience in a Marriott Autograph Collection, luxury boutique hotel, or upscale seafood restaurant kitchen in the Austin, Texas market a significant advantage
