Pastry Assistant - Catering - Full Time
Who you are: You have a passion for creative and sophisticated pastries and have owned pastry production for a minimum of a year in a previous position. You are comfortable and confident in operating without significant supervision and as part of a team in a high volume, fast-paced work environment.

Reporting Structure
The pastry cook will report to the EC and Director of Culinary - Pastry
Position Duties and Responsibilities Summary
The person in this role will prepare plated desserts' components, fillings, sauces, and specialty items, according to the recipe and/or chef's instructions, measuring and mixing ingredients appropriately while following all proper procedures, adjusting temperatures and properly wrapping and labeling all finished products, as required.
This role is also responsible for assisting the Executive Pastry Chef in setting up tastings, maintaining and updating recipe book(s), determining pars needed for week's production, working with Pantry to ensure proper plating and product storage, working with Executive Pastry Chef to prepare special events and holiday desserts and assisting with recipe creations, as requested.
Basic Expectations
  • Clean and properly store all applicable equipment and tools
  • Maintain clean and organized work areas to include all pastry equipment, cooler, freezer, dry storage and other applicable work areas
  • Keep product in stock and on par, as required
  • Properly store all products based on health code regulations
  • Maintain professional image with appropriate chef attire, hat and shoes
  • Wear gloves when handling products
Knowledge, Skills, and Abilities
  • Culinary degree or equivalent experience
  • Basic knowledge of pastry techniques, measurements and recipes required
  • One to two years experience owning pastry preparation
  • Self starter, takes initiative, able to work under direct and indirect supervision
  • Efficient multi-tasking

Physical Requirements
  • Constant standing and walking
  • Frequent stooping, kneeling and crawling
  • Frequent ascending or descending of ladders, stairs and/or ramps
  • Must be able to stand and exert well-paced mobility for up to 8 hours per shift
  • Frequent, continual, intermittent flexing and rotation of the spine, elbows and wrists
  • Must be able to lift up to 20 lbs on a regular and continuing basis
  • Frequent pushing, pulling, lifting or carrying up to 50 lbs, i.e. full racks of dishes, etc
  • Constant talking, expressing or exchanging ideas by means of spoken words and in the process of communicating with employees
  • Talking and hearing occur continuously in the process of communicating with employees
  • Requires manual dexterity to use and operate all necessary equipment
