Lead Line Cook (Breakfast Experience Required)

Position Title: Lead Line Cook
Location: Metro Cafe
Employment Type: Part-time , full-time
Position Summary

Metro Cafe is seeking an experienced and dependable Lead Line Cook with strong breakfast and brunch experience to join our kitchen team. The ideal candidate is a hands-on leader who can work efficiently in a fast-paced environment, maintain high food quality standards, and help supervise daily kitchen operations. This position requires availability on weekends and holidays, as these are essential business days.
Key Responsibilities

  • Prepare and execute breakfast, brunch, and lunch menu items according to recipes and quality standards.
  • Lead and support line cooks during service while maintaining a positive and productive work environment.
  • Ensure all food is prepared, plated, and presented consistently.
  • Monitor food quality, portion control, and kitchen cleanliness.
  • Assist with ordering, inventory management, and minimizing food waste.
  • Train and mentor kitchen staff on recipes, cooking techniques, and food safety procedures.
  • Maintain compliance with all Health Department regulations and food safety standards.
  • Ensure proper storage, rotation, and labeling of food products (FIFO).
  • Open and close kitchen operations as needed.
  • Work closely with management and chefs to maintain menu consistency and operational efficiency.
Qualifications

  • Minimum 3 years of line cook experience, with at least 1 year in a leadership or supervisory role.
  • Strong breakfast and brunch cooking experience required.
  • Knowledge of egg cookery, breakfast meats, pancakes, waffles, sauces, and high-volume breakfast service.
  • Understanding of proper cooking temperatures, food handling, and sanitation procedures.
  • Ability to multitask and work under pressure during busy service periods.
  • Strong organizational and communication skills.
  • Reliable transportation and excellent attendance record.
  • California Food Handler Card required (or ability to obtain upon hire).
Physical Requirements

  • Ability to stand for extended periods.
  • Ability to lift and carry up to 50 pounds.
  • Ability to work in a fast-paced kitchen environment with exposure to heat and kitchen equipment.
Schedule Requirements

  • Must be available to work weekends, holidays, and early morning shifts.
  • Flexible scheduleย

  • Experience with American breakfast and cafe brunch concepts.
  • Experience with inventory management and food cost control.
  • Knowledge of basic sauce preparation and cooking techniques.
