What are some common challenges faced by Neapolitan pizza chefs in maintaining authenticity while working in a high-volume restaurant?

Neapolitan Pizza Chefs often face the challenge of balancing speed with quality, especially during busy service hours. Maintaining the traditional methods—such as using a wood-fired oven at high temperatures and adhering to specific dough fermentation times—can be difficult when there is pressure to produce pizzas quickly. Additionally, sourcing authentic ingredients like San Marzano tomatoes and Italian mozzarella can be challenging, particularly outside of Italy. Effective teamwork and clear communication with kitchen staff are essential to ensure consistency and uphold the standards expected of true Neapolitan pizza.
