Location - Waimea, Big Island, HI
Salary - $75-90k

Seeking a talented Chef de Cuisine to oversee kitchen teams, craft menus, and drive high-quality culinary execution.
 
Responsibilities
  • Lead daily kitchen operations and staff management — oversee food preparation, supervise and schedule cooks, maintain kitchen workflow, and support all outlets with consistent, high-quality execution.
  • Drive culinary quality, menu development, and cost control — create and revise menus, monitor food and labor costs, enforce cost-control procedures, and ensure all recipes, sanitation practices, and safety standards are upheld.
  • Support the Executive Chef and overall culinary program — assume leadership in the Executive Chef's absence, coordinate with stewards and other departments, maintain equipment and kitchen cleanliness, and resolve guest or staff concerns promptly.
Qualifications
  • Culinary expertise with leadership experience — typically six years of culinary work and schooling, with proven ability to supervise, train, evaluate, and discipline kitchen staff while maintaining high production standards. (union experience strongly preferred)
  • Strong operational and administrative skills — capable in labor management, cost analysis, payroll approval, recipe documentation, menu planning, and the use of kitchen technology and computer-based systems.
  • Knowledge of modern culinary techniques and safety standards — well-versed in current food trends, culinary methods, sanitation requirements, equipment maintenance, and regulatory compliance (Food Safety Certification preferred).
