Job description

We are looking to add a butcher to our team at Lake Geneva Country Meats. This position will primarily cut meat for our retail store, but will also assist with our custom processing operation and sausage production as necessary.


We would prefer a candidate with experience, but we are willing to train candidates who have a strong interest in starting a career in butchery. This is a full-time position with Tuesday - Saturday hours and benefits such as health insurance, retirement plan, and PTO available.


Essential functions

  • Operate meat processing equipment such as knives, handsaws, and bandsaws to fabricate retail cuts of meat from subprimals.
  • Assist with grinding meat.
  • Evaluate the quality of products and ensure LGCM standards are met.
  • Follow USDA guidelines to produce safe food.
  • Keep workplace clean and participate in cleaning and sanitation duties.


Competencies


  • Possess knowledge to identify beef, lamb, pork, and poultry primals, sub-primals, and retail cuts.
  • Master techniques of how to clean, cut, trim, bone, tie, and grind the above products.

  • Excellent communication skills and a team-oriented attitude.

  • Excellent organizational skills and attention to detail.


Work environment

This position works in our retail butcher shop and frequently moves in and out of coolers and freezers. This position directly works with animal carcasses and must be able to tolerate working near said carcasses, blood, and other fluids.


Physical requirements

This position must be able to:


  • Fluently communicate verbally and in writing in the English language.

  • Lift up to 60 pounds.

  • Move on a hard floor for the entirety of a shift.

  • Reach items up to seven feet high, with the help of ladders / stools if necessary.

  • Operate in a variety of temperature environments from a chilled, cutting room floor that can be a wet environment, to coolers kept in the 40º range, to freezers that are kept in the 0º range.

  • Previous butchering or meat market experience is preferred, but not necessary.
