Position Summary
(AM & PM AVAILABILITY: flexible) The Pastry Cook will work closely with the Executive Pastry Chef and culinary team to prepare and execute all desserts, breads, and pastry items to the highest standard. This role requires precision, attention to detail, and a passion for creating refined yet approachable desserts that reflect Lutèce’s philosophy.

Key Responsibilities

Production & Execution

  • Prepare, bake, and finish all pastry menu items, including plated desserts, petit fours, breads, and specials.

  • Follow established recipes, portioning, and plating standards to ensure consistency and quality.

  • Assist in developing seasonal dessert offerings in collaboration with the Executive Pastry Chef.

  • Maintain an organized mise en place and execute service in a timely, efficient manner.

Quality & Presentation

  • Uphold Lutèce’s presentation standards with a focus on elegance, balance, and seasonality.

  • Taste and adjust recipes to ensure proper flavor profiles and textures.

  • Monitor ingredient quality and freshness, communicating any concerns to the Chef.

Operations & Cleanliness

  • Maintain cleanliness and organization of the pastry station, equipment, and storage areas.

  • Follow all food safety, and sanitation guidelines.

  • Assist with inventory management, ordering, and proper storage of pastry ingredients.

Collaboration & Professionalism

  • Work closely with the savory kitchen and service teams to ensure seamless service.

  • Communicate clearly and effectively during service and prep.

  • Maintain a positive, team-oriented attitude in a fast-paced environment.

  • Communicates needs and is able to do R&D with the pastry chef.

Qualifications

  • 1–2 years pastry experience, in a fine dining or upscale restaurant environment is preferred.

  • Strong foundational pastry skills, including doughs, custards & tempering chocolate.

  • Proficient in plating.

  • Excellent organizational and time management skills, ability to work under pressure.

  • Ability to work hybrid schedule hours, including morning, evenings, weekends, and holidays.
