JOB TITLE: Sommelier

Focus is on, but not limited to the following:
  • Knows and executes the service guidelines outlined in the manual with extreme attention to detail.
  • Promotes the company's high level of service standards by exhibiting friendliness and a hospitable attitude. Displays full knowledge of the restaurant, McClain Camarota Hospitality Group and its history, and current/upcoming/past menus.
  • Possesses knowledge of menu items, ingredients (history and other culinary uses), garnishes, cooking techniques, flavor profiles, and textures. Capable of professionally and artfully explaining this information in full detail to guests.
  • Describes menu items and wines as requested. This includes understanding the menu thoroughly and being able to describe the chef's style of cooking in general, as well being able to make interesting and appropriate beverage suggestions to compliment the dishes chosen.
  • Understands and executes the expectations in this manual perfectly.
  • Possesses extensive knowledge about the restaurant's wine selection, wine history, processes, and trends.
  • Is up-to-date on wine trends, new vintages, and new vineyards. Uses education to evolve the wine list when changes are deemed necessary.
  • Regularly assists in wine trainings during pre-shift and other staff meetings.
  • Picks up any incoming wine orders and sorts them into the correct bin numbers.
  • Checks any incoming communications from guests and vendors. Makes any changes needed to the pricing/order book, and any reprints needed for the menu.
  • Checks and sets up stations for upcoming service. Ensures every station is stocked with wine decanters, bottle coasters, polished wine glasses, and serviettes.
  • Ensures staff has accurate 86 list, vintage, and winery knowledge.
  • Greets each table reviewing a wine list and assists in ordering by making budget and taste conscious suggestions.
  • Presents wine orders to each table and assists servers in refilling wine glasses and taking new wine orders on existing tables.
  • Maintains the BTG wine selection and cart and the wine display.
  • Performs quality control, addresses storage issues, and informs management of any flawed bottles.
  • Assists in maintaining a clean, safe, and health-code compliant restaurant.
  • Works as a member of the team, communicating with and assisting team members whenever necessary.
  • Assists in drink delivery and food running when necessary.
  • Adds charges for wine bottles or corkage fees to guest tickets.
  • Greets guests promptly as they enter the restaurant, making a positive first impression. Greets guests warmly and sincerely with an honest smile, making eye contact. Always uses positive body language, and speaks in full sentences, avoiding slang.
  • Uses the guest's preferred name at least twice throughout interaction. Knows and acknowledges all VIPs by name and checks in with management immediately upon their arrival.
  • Anticipates guests' needs. Remember, we always "find the yes" when a guest asks a question.
  • Ensures additional bottles are ordered for special requests, private parties, and other events.
  • Can perform all tableside "moves".
  • Hand sells to guests while maintaining inclusivity of off-list items.
  • Serve as floor supervisor, as needed.
  • Performs other duties not listed as requested by management.

Desired Qualifications:
  • Has at least a Level 1 Sommelier Certificate
  • Has at least five (5) years of gourmet food and beverage service experience
  • Must be at least 21 years of age or older
  • Ability to obtain a valid Nevada Alcohol Awareness Card and Nevada Food Handler Safety Training Card
  • Has strong interpersonal, communication skills and hospitality driven attitude
  • Must be polished, professional, friendly, dynamic, and able to multitask and take initiative in a VIP driven and guest service focused environment.
  • Able to move throughout the restaurant(s) during assigned shift
  • Able to be on their feet for extended periods of time
  • Able to present themselves in a professional manner
