Job description

The mission of a Kitchen Director is to maintain a very high standard in all areas of kitchen operations and food safety to ensure every guest receives a consistent food experience of excellence with regards to food quality, presentation and speed of service. The Kitchen Director is expected to work along with their team and the entire store with a collaborative spirit to strive for excellent performance in all areas. The Kitchen Director will ensure the Back of House runs smoothly operationally to an extent that other Chick-fil-A restaurants want to visit us to learn some of our best practices.

Key Responsibilities

• Always delivering crave-able food, in a timely manner that meets or exceeds Chick-fil-A Quality Requirements.

• Coaching the behaviors of all Shift Supervisors, Team Leads & Team Members who work in the kitchen. Those behaviors include:

• Execution of systems that ensures an over the top cleanliness environment.

• Maintaining a work environment that ensures and promotes food safety.

• Vigilant attention to the organization and appearance of the kitchen

• Hustle that creates surprisingly fast speed of service.

• Attention to detail that ensures preparation and production procedures are followed

• Maintains inventory management, utility maintenance/repair of all kitchen equipment & proper ordering.

• Ensures all product that arrives is good and deals with refunds if needed on any products.

• Shift set up sheets are reviewed to avoid any issues.

• Coach, evaluate, provide accountability and feedback for all kitchen supervisors and team members on a daily basis. Formal annual evaluations for team members and semi annual for supervisors.

• Ensuring proper training of kitchen team.

• Make sure the boil outs are done on a routine basis.

• Consistently enforce team member discipline policy.

• Identify & develop potential leaders.

• Meet with new team members after check list is complete to make sure they are all trained.

• Meet & ensure any promotional check lists are complete and that TM feels trained for new role.

• In future, schedule Back of House (BOH) Shift Supervisors, Team Leads & Team Members.

• Ultimately responsible for staffing issues-call offs, no shows, etc. ends with you.

• Maintain a LEAN production environment - Chicken, Inventory, Oil Rotation

• Keep our purpose and mission top of mind for all in kitchen.

• Ensure that day dots are being utilized and chicken products are properly stored by using the FIFO system

• Ensure that the freezer & walk-in cooler is clean, organized and properly rotated & checked for expiration dates

• Design proper Chick-fil-A cleaning and organizational charts to ensure all assignments are completed and checked off by leadership.

• Work with other directors to ensure all staff are trained on back of house rules and policies.

• Chicken Tracking System - freezer, thaw, waste

• Lead the kitchen with enthusiasm and passion • Assist in setting, sharing & celebrating team goals

• Exemplify positive leadership in all situations.

• Use RQA, QIV and CEM finding to ensure consistency and quality of products and behaviors, address areas of improvement immediately, and work with other directors & GM to address problems and create an action list.

• Work with Front of House Director for roll-out of new products.

• Demonstrate a growth mindset.

• Responsible for helping to facilitate all catering efforts, including deliveries and ADP’s. This is executed by promoting vision, policies, and procedures.
