Job description

Motor City Seafood Company is seeking an enthusiastic and detail-oriented Fish Processor/Fish Filleter to join our dynamic team in Highland Park. As a growing statewide company, we pride ourselves on delivering the highest quality seafood products while maintaining a strong commitment to sustainability, food safety, and customer satisfaction.

As a Fish Processing Technician, you will be responsible for processing and preparing a variety of raw fish products for distribution and sale. Your primary focus will be maintaining product quality while following strict food safety and sanitation standards. You will learn to scale, gut, pin-bone, and fillet multiple fish species while working alongside skilled filleters who will train you on our standards, processes, and procedures

Essential Duties and Responsibilities
  • Punctuality is a top priority. Shift starts at 4:30 AM sharp. If you cannot consistently arrive on time, this position is not the right fit.
  • Clean, scale, gut, and fillet fish using proper tools and techniques. Training provided.
  • Previous knife skills are helpful, but not required - we value initiative, enthusiasm, and a willingness to learn.
  • Remove bones and skin from fish fillets as required.
  • Report any product quality concerns immediately to management.
  • Operate and maintain processing equipment, including filleting and deboning machines.
  • Weigh, grade, re-pack, and label processed seafood products according to specifications.
  • Ensure proper storage and preservation of seafood products, including refrigeration and freezing.
  • Maintain a clean and organized work area while following sanitation and hygiene standards.
  • Monitor and record processing times and related production data.
  • Work collaboratively with team members to meet daily production goals and quality standards.
  • Pack wholesale orders as needed.
  • Report equipment malfunctions or safety hazards to supervisors promptly.
Work Schedule

The Fish Processing Technician is a full-time position.

  • Shift begins at 4:30 AM sharp.
  • Weekend hours are required based on production needs and scheduling demands.

Work Environment & Physical Demands

The Fish Processing Technician will work onsite at our state-of-the-art production facility in Highland Park, Michigan.

Physical demands include, but are not limited to:

  • Ability to work in a temperature-controlled environment below 40°F
  • Ability to safely use knives, tools, and processing equipment
  • Ability to work in wet and dry conditions
  • Exposure to FDA-approved cleaning chemicals
  • Ability to operate warehouse equipment
  • Frequent use of hands for grasping, fine manipulation, pushing, and pulling
  • Frequent standing, walking, bending, kneeling, and crouching throughout the shift
  • Ability to lift, stack, move, and rotate items weighing up to 50 pounds
  • Ability to push or pull carts requiring up to 100 pounds of force
Qualifications
  • Must be 18 years of age or older with valid identification and legal work authorization
  • Punctuality is mandatory. This position starts at 4:30 AM with no exceptions
  • Previous seafood preparation or processing experience is helpful, but not required
  • Food safety or seafood handling certifications are a plus, but not required
Skills & Abilities
  • Knife handling experience and familiarity with cutting equipment preferred
  • Knowledge of fish species and seafood processing techniques is beneficial
  • Understanding of food safety procedures and sanitation standards preferred
  • Ability to work a flexible schedule, including weekends
  • Must wear proper clothing suitable for cold production environments
  • Ability to work efficiently in a fast-paced production setting
  • Strong attention to detail and commitment to quality
  • Physical stamina and ability to perform repetitive tasks and heavy lifting
  • Ability to work independently and as part of a team
  • Strong professionalism, communication, and attendance habits
