Every day, our team prepares thousands of pounds of fresh, high-quality products that supply Joseph's Classic Market locations throughout South Florida. The Director of Commissary Operations is responsible for ensuring every aspect of that operation runs efficiently—from production planning and food safety to inventory management, labor performance, and distribution.

Position Summary

The Director of Commissary Operations – Joseph’s Food is responsible for overseeing all operations of Joseph’s Food production facility, overseeing high-volume batch production, food safety, inventory control, third-party distributors, labor management, and distribution to retail locations. This role leads a structured, fast-paced production environment responsible for producing more than 8,000+ pounds daily, ensuring consistent product quality, operational efficiency, and cost control. The position serves as the on-site operational leader, translating company strategy into disciplined daily execution.

Key Responsibilities

  • Operations & Production Management
    • Oversee daily production across all product categories (prepared foods, meat, pizza, bakery, deli, and additional commissary product lines)
    • Plan and execute daily production schedules to meet store demand, delivery timelines, and production goals
    • Verify and monitor production yield, efficiency, and product consistency while minimizing waste
    • Identify operational bottlenecks and optimize workflow, organization, and production efficiency
    • Oversee packaging, labeling, and distribution to multiple store locations
  • Operational Control & Performance Management
    • Track and monitor production performance, labor efficiency, yields, and quality metrics
    • Analyze operational results and implement corrective actions to improve performance
    • Support cost control initiatives while maintaining product quality and service levels
  • Food Safety & Quality Assurance
    • Enforce all food safety standards (HACCP, local regulations, internal SOPs)
    • Ensure all products meet established food safety, quality, recipe, labeling, storage, and regulatory standards
    • Take immediate corrective action when standards are not met
    • Maintain audit readiness through proper storage, rotation, documentation, and corrective actions
  • Inventory & Supply Chain
    • Oversee raw material, ingredient, packaging, and finished goods inventory
    • Maintain accurate inventory controls while minimizing waste and shrink
    • Coordinate purchasing, receiving, and material flow to support production
  • Labor & Team Leadership
    • Lead, coach, and develop production supervisors and team members
    • Establish daily production priorities and hold teams accountable for safety, quality, cleanliness, and execution
    • Manage labor scheduling aligned with production demand
    • Manage employee performance, coaching, and development
    • Partner with HR on hiring, onboarding, and employee relations
  • Distribution & Logistics
    • Oversee order fulfillment and delivery to retail stores and third-party distributors
    • Ensure accuracy, timeliness, and quality of outbound shipments
    • Coordinate logistics to maintain store-level in-stock performance
  • Financial & Operational Performance
    • Own operational performance related to labor, food cost, waste, and overhead
    • Monitor KPIs such as production yield, labor efficiency, waste, service levels, and order accuracy
    • Identify process improvements that reduce costs and improve operational performance
    • Support annual budgeting and forecasting
  • Systems & Process Development
    • Implement and enforce standardized operating procedures
    • Support ERP / production systems (BOMs, inventory, order guides)
    • Drive continuous improvement and operational discipline

Qualifications

  • 5+ years of leadership experience in a high-volume or large-batch food production, commissary, food manufacturing, or multi-unit food operation
  • Strong knowledge of food safety regulations, production planning, inventory management, and operational leadership
  • Experience managing large hourly teams and production schedules
  • Strong financial acumen and operational decision-making skills
  • Bilingual in English and Spanish
  • Experience with ERP or production management systems preferred
  • Background in fresh foods, prepared foods, bakery, meat, or commissary operations preferred
  • Highly organized, detail-oriented, and committed to continuous improvement

Physical & Work Environment

This position is performed in a high-volume commissary production environment and requires extended periods of standing, walking, bending, and lifting throughout the shift. The Director of Commissary Operations regularly works around commercial food production equipment, refrigerated storage areas, and varying temperatures. Schedule flexibility is required, including early mornings, evenings, weekends, and holidays as business needs dictate.
