The Big Fish in the Back: Now Hiring a Sous Chef! 

Location: The Hungry Tarpon at Robbie's Marina, Islamorada, FL

Do you have the leadership of a Captain and the culinary chops of a seasoned pro? The Hungry Tarpon isn't just a restaurant; it’s an Islamorada powerhouse. From our world-famous "Trailer Trash" Bloody Marys to the freshest snapper coming off the boats, we stay busy, we stay loud, and we stay legendary.
We’re looking for a Sous Chef who can command the line, mentor the crew, and keep the kitchen humming like a well-oiled outboard motor. If you thrive in high-volume environments and can maintain your cool when the tickets are trailing out the door, we want you in our kitchen.
The "New Crew" Rule: To ensure a brand-new leadership dynamic, we are exclusively seeking candidates with no previous employment history at The Hungry Tarpon or Robbie’s Marina. If you’ve never worked for us before, we want your fresh talent! 
Your Mission: Commanding the Culinary Chaos

As our Sous Chef, you are the bridge between a perfect plate and a profitable kitchen. You aren’t just "the boss"—you’re the lead engine.
  • Line Leader: You’ll be the primary driver on the line during peak hours, ensuring every dish—from the fish tacos to the lobster frittatas—meets our high standards for taste and presentation.
  • Operational Ace: You’ll manage prep lists and inventory to ensure we never run out of the good stuff while keeping food waste at a minimum.
  • Crew Captain: You will train and motivate a diverse kitchen team. We want a leader who builds a "we’re all in this together" culture.
  • Quality & Safety Warden: You’ll uphold top-tier sanitation standards  and ensure the kitchen stays organized and efficient.
  • Tech Savvy: We use modern tools to stay organized. You’ll help manage tasks and kitchen flow to keep us ahead of the rush.
What You Bring to the Pass:

  • Proven Grit: You have significant experience in high-volume, fast-casual or full-service kitchens. Experience in a waterfront or seafood-heavy environment is a massive plus.
  • Cool Under Pressure: You have serious experience in high-volume, fast-paced kitchens. You know how to handle the heat of a Florida Keys afternoon.
  • Leadership Mojo: You’re a "lead by example" type. You aren't afraid to jump on the dish pit or the prep station if that’s what the team needs to win.
  • Detail Detective: You have a keen eye for food cost, portion control, and plate consistency.
  • Reliability: You’re a professional who understands the demands of the Florida Keys' peak seasons, including weekends and holidays.
  • Bilingual Skills (A Big Plus): While not required, being fluent in English and Spanish is a major asset for communicating with our diverse and hardworking team.
