Job description

Job Overview

We are seeking an experienced Senior Catering Manager to lead high-volume catering operations within a dynamic university dining environment in Johnson City, Tennessee. This role oversees complex catering services across campus, supporting residential dining, retail operations, and full-service catering for university and community events.

The ideal candidate brings strong leadership experience in large-scale catering, banquet operations, or institutional food service, with a proven ability to manage high-volume events, drive client satisfaction, and ensure operational excellence in a fast-paced environment.

Key Responsibilities

  • Lead and oversee daily catering operations, including planning, production, delivery, and execution of events
  • Manage high-volume catering sales and service delivery, including VIP and multi-event days
  • Partner with clients to design customized catering and conference service experiences
  • Supervise and develop catering staff through scheduling, delegation, training, and performance management
  • Ensure accuracy and quality across all catering orders, event sheets, and service execution
  • Oversee inventory, procurement, invoicing, and product delivery processes
  • Manage budgets and control costs across labor, food, equipment, and materials
  • Maintain compliance with food safety, sanitation, and workplace safety standards
  • Coordinate with culinary, sales, and front-of-house teams to ensure seamless service delivery
  • Utilize workforce management systems (e.g., Kronos or similar) for scheduling and payroll oversight

Qualifications

  • Bachelor's degree or equivalent professional experience
  • Minimum 3 years of experience in catering, food service management, or food production
  • Minimum 3 years of supervisory or management experience in a catering or hospitality environment
  • Proven experience managing high-volume catering operations ($1.5M+ annual catering or equivalent scale)
  • Experience executing multiple events per day, including VIP or high-profile functions
  • Strong background in labor management, cost control, and operational planning
  • Experience collaborating across sales, culinary, and service teams

Preferred Experience

Experience in one or more of the following environments is highly desirable:

  • University or campus dining services
  • Hospital or healthcare food service operations
  • Corporate dining or large-scale catering programs
  • Conference centers, banquet operations, or hospitality catering companies
