About the Role

We are seeking an impeccably polished, professional, and knowledgeable Sommelier to join an elite beverage team at our luxury Chinese concept. A restaurant that delivers a world-class dining experience, seamlessly pairing sophisticated, modern Chinese cuisine with an extraordinary, globally recognized beverage program.

As a Sommelier, you will be the floor authority on our extensive wine and sake collections. The ideal candidate will possess a rare blend of deep technical expertise, an elegant and refined tableside presence, and a dynamic sales mindset. You will guide high-profile guests, VIPs, and international travelers through curated pairings that elevate their dining experience, while actively driving beverage revenue.

Key Responsibilities

Guest Experience & Tableside Service

  • Elite Hospitality: Deliver flawless, highly personalized beverage service on the dining room floor, maintaining the highest standards of luxury hospitality.

  • Curated Pairings: Educate and assist guests with wine, sake, and spirit selections, artfully creating pairings that complement the complex flavor profiles of high-end Chinese cuisine.

  • Cellar Service: Oversee proper storage, temperature control, decanting, and pristine glassware service for all selections, particularly ultra-premium and rare vintages.

Sales & Program Management

  • Revenue Generation: Actively maximize beverage sales on the floor through intuitive upselling and sophisticated guest engagement.

  • Inventory & Maintenance: Assist the Beverage Director with cellar organization, monthly inventory, restocking, and ensuring the wine and sake lists are meticulously accurate and up to date.

  • Staff Education: Conduct ongoing beverage training and tastings for the service team to elevate their base knowledge and confidence on the floor.

Qualifications & Requirements

  • Experience: Minimum of 2–4 years of experience as a Sommelier in a luxury, fine-dining, or high-volume resort environment (Las Vegas Strip experience is highly preferred).

  • Credentials: Certified Sommelier (CMS) or WSET Level 3 preferred. Specialized certifications in Sake (e.g., Certified Sake Sommelier, Kikisakeshi, or WSET Level 3 in Sake) are a significant advantage.

  • Product Knowledge: Exceptional, deep-rooted knowledge of international wine regions, European classics, and premium sake production and styles.
