Directs all aspects of ware washing and the cleaning of food preparation areas while supervising steward staff and their duties. Responsible for total maintenance and sanitation in all food production service areas; Ensured all food and beverage outlets have sufficient equipment to perform adequately. Responsible for guiding and developing staff including direct reports. Must ensure sanitation and health standards are achieved. Areas of responsibility comprise overseeing all stewarding and kitchen maintenance operations on assigned shifts.
ESSENTIAL DUTIES AND RESPONSIBILITIES:
  • Supervise the Stewarding team, and ensure all duties and tasks are assigned and completed
  • Assists in the setup and breakdown of banquet functions
  • Ensures Cooks have the utensils and necessary items to operate in the kitchen
  • Assists the Cooks in making sure each food outlet is running effectively
  • Responsible for the hiring and development of personnel while ensuring an adequate level of labor is used to perform to the required level of service
  • Understands and administers performance appraisals, sets performance expectations, and provides coaching and operational support for all Steward staff
  • Maintains Team Member departmental personnel files in an organized manner
  • Completes reports daily as required reviews adjusts, and approves Team Member time in the time-keeping system
  • Assist in monthly inventories, as assigned
  • Alerts Food & Beverage Leadership of potentially serious issues.
  • Supervises the stewarding function in all kitchen areas to promote overall cleanliness, sanitation and compliance with health and safety regulations. Stewarding functions include setting up work stations, cleanliness and storage of dishes, filling dish machines, ensuring correct chemical levels, maintaining efficient traffic patterns in the kitchen, etc.
  • Educates Lead Stewards and Stewards on current safety and sanitation issues to ensure compliance with all health and safety regulations. Informs management of hazardous situations, emergencies or threats to the security of guests, team members, or resort assets. Ensure that equipment is prepared and operational for the following shift's work.
  • Supervisor will work with team members in all positions and shifts as required and will perform team member's duties in team members' absence or determine appropriate replacements to fill gaps.
  • Adheres to regulatory, departmental, and company policies in an ethical manner and encourages others to do the same
  • Other duties as assigned

KNOWLEDGE, SKILLS, AND EXPERIENCE:
Required
  • High school graduate or equivalent
  • One year as a Supervisor or Manager in a high volume, banquet, buffet, casual and/or fine dining or related environment
  • Excellent interpersonal, customer service communication, team building, and problem-solving abilities
  • Professional appearance as outlined in the Prairie Band Casino & Resort Team Member Handbook
  • Must be able to work independently and as a member of a team
  • Must be able to work a flexible schedule which may include various shifts, weekends, and holidays
  • A record of satisfactory performance and reliability in all prior and current employment

Preferred
  • Bilingual/Spanish speaking
  • One year of Steward experience or within related fields

  • Physically mobile with reasonable accommodations
