Job Overview
The Pillars of Hermantown is Ebenezer's newest managed senior living community in northern Minnesota, near Duluth and will offer Independent Living, Assisted Living and Memory Care options with 105 total apartments near major crossroads and amongst beautiful scenary. The Pillars creates purposeful lifestyles for our seniors with dedicated staff to meet their needs in a variety of ways. We are looking for a Culinary Director at our beautiful community in Hermantown, MN. This position is responsible for overseeing all dining services operations and ensuring that meals are prepared and presented in accordance with applicable regulations and customer expectations.
This full-time schedule includes:
  • 80 hours per two week pay period
  • Day shifts
  • Weekends as needed

Responsibilities
Plans and manages all aspects of dining services operations:
  • Follow Corporate menus
  • Manages inventory and food/supplies budget
  • Assists with planning and developing menus for upcoming week
  • Prepares and/or oversees food preparation ensuring that proper sanitation and food handling techniques are used
  • Makes substitutions and revisions as necessary to accommodate special dietary needs of residents
  • Maintains storage area and inventories
  • Ensures that kitchen and storage areas are clean and orderly
  • Place order through online ordering platform and process PO & subsequent invoicing requirements.
  • Food Preparation.
  • Properly cook foods to specified temperatures.
  • Products meet temperature and quality standards.
  • Follow standardized recipes and products to ensure products are consistent in quality and nutritional value.
  • Weigh and measure ingredients per standardized recipes
  • Use correct portioning utensils.
  • Assemble food within specified time frames.
  • Production is and meal service is provided in a timely manner.
  • Prepare bakery items per standardized recipes.
  • Accurately complete tasks listed on daily preparation sheets.
  • Assist with the special events.
  • Proper knowledge and prep of texturized diets utilizing International Dysphagia Diet Standardization (IDDSI).
  • All texturized diets are prepared within the IDDSI framework and standards.
  • Sanitize equipment and work area after each use.
  • Maintain a "clean as you go" attitude demonstrated by a clean work area.
  • Clean and sanitize equipment after each use or per the routine cleaning schedule.
  • Use appropriate equipment and chemicals according to manufacturer's recommendations.
  • Maintain separate clean and dirty areas in work area.
  • Scrub pots/pans in the 3-compartment sink area.

Hires and supervises dining staff:
  • Ensures that new employees are properly trained and oriented to their job responsibilities
  • Provides on-going performance feedback and addresses performance issues in a timely and appropriate manner
  • Conducts 90-day and annual performance reviews in a timely manner
  • Promotes working relations and teamwork among employees

Promotes positive resident relations and satisfaction:
  • Ensures that dining area is clean and inviting
  • Welcomes residents, initiates conversation and encourages socialization
  • Solicits resident feedback and suggestions.
  • Listens to complaints and responds professionally and appropriately. Refers issues to Executive Director as appropriate.
  • Accommodates resident requests such as requests for substitute foods, change in seating, etc.
  • Works with residents and families in planning private gatherings

Required Qualifications
  • One to Three Years
  • Performance Management Skills
  • Working knowledge of basic Microsoft applications
  • Food Protection Manager Certification issued by an ANAB-CFP accredited food sanitation program and
  • Certified Food Protection Manager (CFPM) (must be issued by State of Minnesota for locations in the state of MN)

Preferred Qualifications
  • Associate of Applied Science Vocational/Technical Training or Associate Degree - Food Service
  • Certified Dietary Manager
