The Executive Pastry Sous Chef plays a pivotal role in shaping the pastry identity of Omni PGA Frisco. Working alongside the Executive Pastry Chef, this leader ensures that every dessert, amenity, and sweet experience reflects the resort's commitment to excellence, innovation, and refined Texas luxury. This position blends artistry with precision, guiding a talented team in delivering exceptional pastry offerings across restaurants, banquets, golf activations, in-room dining, and VIP experiences.
Responsibilities:
Culinary Excellence & Operational Leadership
  • Lead daily pastry production with an unwavering commitment to quality, consistency, and elevated presentation across all resort outlets.
  • Execute refined desserts for banquets, large-scale golf tournaments, signature restaurants, IRD, poolside service, and bespoke VIP amenities.
  • Maintain a seamless production environment through meticulous prep planning, station organization, and timely execution aligned with BEOs and event timelines.
  • Steward food cost management through thoughtful ordering, waste reduction, and disciplined inventory practices.
  • Uphold Omni's culinary standards by maintaining and enforcing precise recipes, techniques, and presentation guidelines.
  • Ensure readiness for next-day production through proactive communication with storerooms and stewarding.

Leadership, Culture & Team Development
  • Inspire, mentor, and elevate pastry cooks through hands-on training, constructive feedback, and a commitment to professional growth.
  • Foster a culture of respect, craftsmanship, and collaboration that reflects Omni PGA's service philosophy.
  • Support recruitment, onboarding, and performance development within the pastry team.
  • Serve as the department leader in the absence of the Executive Pastry Chef, ensuring continuity of excellence.

Innovation, Creativity & Brand Alignment
  • Contribute to the development of signature desserts, seasonal menus, and high-impact amenities that enhance the resort's luxury identity.
  • Balance classical pastry foundations with modern techniques and current trends to create offerings that feel both timeless and contemporary.
  • Thoughtfully adapt recipes to accommodate dietary needs including celiac, gluten intolerance, allergies, and dairy sensitivities.
  • Elevate the visual and sensory impact of desserts to align with Omni PGA's refined aesthetic and guest expectations.

Quality, Safety & Compliance
  • Uphold the highest standards of food safety, sanitation, and HACCP compliance.
  • Ensure proper labeling, storage, and rotation of all ingredients and finished products.
  • Conduct regular inspections of workspaces and equipment to maintain a pristine, efficient environment.
  • Maintain Certified Food Protection Manager Certification.

Collaboration & Communication
  • Partner closely with Banquets, Restaurants, Purchasing, and Stewarding to ensure flawless execution of high-volume events and daily service.
  • Communicate production needs, timelines, and challenges with clarity and professionalism.
  • Interpret and execute BEOs with precision, ensuring readiness for major events, golf activations, and peak business periods.
  • Support Omni PGA's culture of teamwork, hospitality, and elevated guest experience.

Qualifications:
Essential
  • Minimum 6 years' experience in a 5-star hotel or luxury fine-dining environment.
  • Strong foundation in advanced pastry techniques, high-volume production, and refined dessert execution.
  • Diploma from an accredited culinary pastry school.
  • Certified Food Protection Manager Certification.
  • Exceptional organizational skills with the ability to thrive under pressure while maintaining impeccable attention to detail.
  • Flexibility to work early mornings, evenings, weekends, holidays, and event-driven schedules.
  • Strong understanding of modern dietary needs and allergen-safe recipe development.
  • Ability to lift up to 50 lbs, push/pull up to 75 lbs, and stand for extended periods.
