What is a scratch culinary job?

Scratch Culinary jobs refer to roles in the food service industry where dishes are prepared from basic, raw ingredients rather than using pre-made or processed foods. This approach emphasizes fresh, high-quality ingredients and traditional cooking techniques to create meals entirely from 'scratch.' People in scratch culinary positions may work as chefs, cooks, or kitchen staff in restaurants, hotels, or catering services focused on authentic and flavorful cuisine. These jobs often require strong culinary skills, creativity, and a passion for food. Working in scratch culinary environments can be both challenging and rewarding for those who enjoy hands-on cooking and menu innovation.

What are some common challenges faced by scratch culinary professionals, and how can they be managed effectively?

Scratch culinary professionals often face challenges such as time management, maintaining consistency in dishes, and adapting to fluctuating ingredient availability. Successfully managing these challenges involves strong organizational skills, effective communication with the kitchen team, and staying adaptable to menu changes. Regular training, efficient prep work, and fostering a collaborative environment can help ensure high-quality output and smooth kitchen operations.

What are the key skills and qualifications needed to thrive as a scratch culinary professional, and why are they important?

To thrive as a Scratch Culinary professional, you need strong culinary techniques, recipe development skills, and a solid understanding of food safety, often supported by formal culinary education or apprenticeship. Familiarity with commercial kitchen equipment, inventory management systems, and certifications like ServSafe are typically required. Creativity, attention to detail, and teamwork are essential soft skills for excelling in food preparation and kitchen collaboration. These competencies ensure consistently high-quality dishes, efficient kitchen operations, and a positive dining experience for guests.

Job description

Grass Clippings Rolling Hills, located in Tempe, AZ, is pleased to announce an excellent career opportunity for a Full-Time Executive Chef! We are seeking a driven individual who is eager to learn, contribute, and grow within a fast-paced hospitality-focused property organization. As part of Troon, you will contribute to a global leader in golf and community management.

Arizona's most exciting culinary concept is looking for its next creative force.

We are not a traditional golf course restaurant. Glenrosa is a vibrant Sonoran live-fire restaurant and social destination built around scratch-made cuisine, bold flavors, community, and the energy of modern Arizona hospitality. Since opening in April 2025, we have generated more than $4 million in sales—and we are just getting started.

We need a Head Chef who brings the same fire as the kitchen. Someone who leads from the line, builds a culture people want to work in, and understands that every plate is a brand moment.

WHAT THIS POSITION REALLY IS

The Head Chef will oversee all culinary operations at Glenrosa—from daily kitchen execution to menu development, event programming, food cost management, and team leadership. This role carries ultimate responsibility for the quality, consistency, and culture of everything that comes out of the kitchen. Running the full operation

This role owns the full culinary operation—menu development, seasonal features, food cost controls, ordering, scheduling, training, and compliance. You will work directly alongside F&B leadership and collaborate with Events, Golf, and the broader Grass Clippings team to support activations, tournaments, nightlife, and private events.

  • Culinary Operations
  • Menu Development
  • Food Cost & Controls
  • Event & Activation Support
  • Inventory & Ordering
WHAT SUCCESS LOOKS LIKE:
  • Building a kitchen people are proud to work in.
  • Delivering a culinary experience guests talk about.
  • Developing menus that feel innovative, seasonal, and alive.
  • Leading a team with accountability, creativity, and genuine hospitality.
  • Driving food cost efficiency without sacrificing quality.
  • Making Glenrosa one of the Valley's most talked-about dining destinations.
WHO YOU ARE

Culinary leadership experience in a high-volume restaurant or hospitality environment is required. We are looking for someone with a genuine passion for scratch-made, live-fire cuisine, strong leadership and communication skills, and the organizational ability to run a full kitchen operation efficiently and profitably.

Experience with Sonoran or Southwestinspired cuisine is a plus—but a love of bold, creative food is non-negotiable. Kitchen EXCELLENCE MATTERS

Experience with or willingness to learn:

  • BevSpot inventory program
  • Food cost tracking & waste management
  • Ordering and purchasing controls
  • Proficient in Microsoft Office
  • Event and catering execution
  • Budgeting & reporting
  • Inventory & purchasing controls
  • Accounts payable/receivable workflows
  • Team scheduling and operational system
  • Menu costing and pricing
WHAT YOU'LL BUILD:
  • A rotating seasonal menu rooted in Sonoran flavors
  • Live-fire and wood-fire feature programming
  • A culinary identity that makes Glenrosa a destination
  • Staff training programs that build a hospitality-first kitchen
  • Event menus for tournaments, nightlife, and private dining
