Job Summary: Responsible for preparing and cooking food of all menu items in accordance with F&B recipes and standards while maintaining a neat, clean and safe work area, and making sure the kitchen is stocked.

Primary Duties & Responsibilities:

  • Maintain a positive and professional approach with Team Members and guests.
  • Maintain knowledge of all current and upcoming promotions and events at Odawa Casino Resort.
  • Uses production guide and daily inventory and ordering procedure.
  • Stores foods in designated areas, utilizing knowledge of temperature requirements and food spoilage.
  • Performs proper receiving, thawing, storage and location, proportioning, prep area sanitation, heating, holding, and re-heating product (including sauces, soups, salad bar items, lunch, dinner, and produce).
  • Practices proper raw product quality and standards for food production. Be able to identify all raw products by sight.
  • Responsible for producing proper raw products into a quality finished product according to pre- determined standards for food preparation.
  • Demonstrates proper use of dry and liquid measure and scales.
  • Uses kitchen manuals and recipe files.
  • Measures and weighs designated ingredients.
  • Preps an adequate amount of food to run the line efficiently, using proper storage and dating procedures.
  • Washes, peels, cuts, and seeds vegetables and fruits; cleans, cuts, and grinds meats, poultry, and seafood.
  • Prepares soups, sauces, salad dressings, cold sauces, dips, and garnishments.
  • Prepares foods by methods of frying, sautéing, broiling, roasting, braising, poaching, steaming, baking, stir-frying, simmering, boiling, and other means.
  • Sets up, maintains, and breaks down cook stations.
  • Responsible in maintaining all standards regarding sanitation, uniforms, food preparation, and storage.
    Carries pans, kettles, and trays of food to and from workstations, stove, and refrigerator.
  • Assists with dishes and pots/pans in the absence of a steward.
  • Cleans work areas, equipment and utensils, segregate and remove garbage, sweep and mop the line, and steam-clean or hose garbage containers.
  • Attends all meetings as required.
  • Completes all required training satisfactorily.
  • Always maintain the highest level of confidentiality.
  • Work at other properties as needed.
  • Perform in assigned areas as dictated by business levels and directed by management.
  • Performs all other duties as assigned within the scope of the position.

Minimum Qualifications:

  • Minimum of one (1) year experience in the service industry.
  • Must have basic math skills.
  • Must read, write, and speak English fluently.
  • Must have knowledge of proper use of all kitchen equipment used in prep procedures.
  • Must know the importance and demonstrate use of rotation (First In First Out—FIFO) system.
  • Must have knowledge of compound dressings, sauces, and salads.
  • Must have proper knowledge of fresh meat, poultry and seafood handling and proper meat roasting procedures.
  • Must be able to stand for extended periods of time, bend, stoop, reach, push and pull.
  • Exposure to loud and continual noise levels and a smoke-filled environment.
  • Must be flexible with shift and days off with the ability to work overtime, weekends, holidays, and special events, etc., as needed.
  • You may be required to pass a skills assessment test to determine if you meet the minimum qualifications of the position.
  • Must be able to obtain a gaming license in accordance with the regulations established by the LTBB Gaming Regulatory Commission and be able to serve in the position under any other applicable law.
