THE ROLE

As Executive Chef, you own the culinary program end to end — and you're building it from a blank page. You'll design the menus, source from our local desert and regional partners, hire and train the brigade, and deliver food that holds its own against any private club in the country, whether that's an intimate member lunch or an eighty-guest event under the open desert sky.

This is a builder's role. You'll write the menus and recipes, set the plating specs and standards, build the kitchen's systems from prep lists to line checks, and establish the vendor relationships that keep a remote desert kitchen running. Expect to balance à la carte member dining, private events, and a catering operation that flexes hard around the event calendar.

You'll lead the full culinary chain — Executive Sous Chef, sous chefs, and line cooks — hiring and developing a team that performs under pressure. On a good day you're refining a tasting menu; on a busy one you're on the line, expediting, and coaching a new cook mid-service.

This is a private club, so the food is only half the job. You'll build relationships with members, learn their preferences and dietary needs, and make the culinary experience feel personal every visit. The best chef here becomes a name members know and a reason they keep coming back.


ESSENTIAL JOB FUNCTIONS

  • Strategic ownership of the culinary program — vision, standards, and direction across every outlet
  • Menu development, recipe standardization, and plating specs at a fine-dining or luxury level
  • Custom and themed menu creation with artistic plating and presentation for signature member events
  • Multi-outlet execution across à la carte member dining, private events, and catering
  • Following and adjusting BEOs in partnership with the events team
  • P&L ownership — setting margins, managing against projections, and controlling major operating expenses
  • Kitchen leadership — hiring, training, scheduling, payroll, and performance management
  • Cost control: food cost, ordering, inventory, portioning, and labor management
  • Sourcing and vendor management, including local farm and specialty partners
  • Sustainable, seasonally driven menu design for allergies, dietary needs, and member preferences
  • Recipe documentation — cards, specs, and photography that keep quality consistent across the team
  • Systems building from scratch — prep lists, line checks, station setups, and par levels
  • Health, safety, and sanitation compliance (ServSafe / HACCP)
  • Serving as the culinary face of the club for press, media, and marquee member moments
  • Composure under high-volume event pressure and a member-facing, hospitality-first mindset

EXPERIENCE

  • 5+ years as Executive Chef or equivalent in fine dining, luxury hospitality, or a private club
  • Proven track record opening a kitchen or building a culinary program from scratch
  • Experience delivering à la carte service, large-format events, and catering simultaneously
  • Demonstrated P&L accountability — margins, projections, and operating-expense control
  • Experience with scheduling, labor costing, payroll administration, and performance management
  • Proficiency with accounting/inventory software and budgetary analysis
  • Experience sourcing from and negotiating with local and specialty vendors
  • Formal culinary training or equivalent professional experience
  • Food-safety certification (ServSafe or equivalent)

DETAILS

  • On-site at Willow Springs Raceway in the Mojave Desert; weekend, holiday, and event-day coverage required

PHYSICAL DEMANDS

Position requires walking, standing, and giving direction most of the working day; must be able to stand and exert well-paced mobility for up to 4 hours in length. Must be able to bend, stoop, squat and stretch to fulfill cleaning tasks. Must be able to lift up to 15 lbs. on a regular and continuing basis. Requires grasping, writing, standing, sitting, walking, repetitive motions, bending, climbing, listening and hearing ability and visual acuity. Talking and hearing occur continuously in the process of communicating with members, supervisors and subordinates.
