Pasta Maker – Ludico

Ludico, a new European-inspired dining concept in Tribeca, is seeking an experienced and passionate Pasta Maker to join our culinary team.

Our Pasta Maker will be responsible for producing exceptional fresh pasta according to established recipes and standards while maintaining consistency, quality, and attention to detail. The ideal candidate has hands-on experience with both fresh hand-shaped pasta and fresh extruded pasta and takes pride in the craftsmanship behind every dish.

Ludico is a European-inspired dining concept in the heart of Tribeca, bringing classic European technique together with contemporary, playful New York energy. Our culinary team is dedicated to craftsmanship, exceptional ingredients, creativity, and delivering a memorable dining experience.

We are looking for a Pasta Maker who shares our passion for quality and is excited to bring skill, precision, and creativity to the opening team at Ludico.

Key Responsibilities
  • Prepare and produce fresh pasta daily according to established recipes, techniques, and quality standards.

  • Produce a variety of hand-shaped and extruded pastas, ensuring consistency in texture, shape, size, and quality.

  • Monitor pasta throughout the production process and make adjustments as necessary to maintain high-quality standards.

  • Maintain appropriate inventory and par levels and accurately track pasta production and stock.

  • Properly operate and care for commercial pasta machines, mixers, extruders, and other kitchen equipment.

  • Accurately portion, package, label, date, and store finished products according to established standards.

  • Maintain a clean, organized, and sanitary pasta production area.

  • Follow all food safety, sanitation, and workplace safety procedures.

  • Minimize waste and properly utilize ingredients while maintaining exceptional quality.

  • Communicate effectively with chefs and other members of the culinary team regarding production needs, inventory, and quality.

  • Support the culinary team with additional kitchen and production responsibilities as needed.

    • Pasta Production: Prepare fresh pasta daily using recipes and standards 
    • Quality Control: Consistently check pasta products and adjust methods to meet high-quality standards
    • Inventory & Par Levels: Maintain correct inventory levels and track pasta stock across outlets 
    • Equipment Operation: Operate commercial pasta machines, mixers, and other kitchen/production equipment 
    • Sanitation & Safety: Keep the production area clean and sanitary; follow food safety regulations and Good Manufacturing Practices
    • Packaging & Labeling: Accurately package and label products, ensuring correct code dates, seal integrity, and product specifications 
Qualifications
  • Minimum 1 year of experience in a commercial kitchen, pasta production environment, or similar culinary role preferred.

  • Experience producing fresh hand-shaped and extruded pasta is required.

  • Strong knowledge of pasta-making techniques, dough preparation, ingredients, and production methods.

  • Familiarity with commercial pasta equipment and professional kitchen operations.

  • Knowledge of proper food handling, sanitation, and food safety practices.

  • Strong attention to detail and commitment to consistency and quality.

  • Ability to work efficiently in a fast-paced culinary environment.

  • Strong communication and teamwork skills.

  • Creativity, craftsmanship, and a passion for exceptional food.

  • High school diploma or equivalent required; culinary degree or professional culinary training preferred.

    • Technical Skills: Knowledge of pasta-making techniques, food safety regulations, and commercial kitchen operations 
    • Physical Ability: Ability to lift up to 50 pounds, stand, walk, bend, and squat for extended periods 
    • Education: High school diploma or equivalent; culinary degree preferred 
    • Experience: 1+ year in a commercial kitchen or pasta production role preferred 
    • Soft Skills: Attention to detail, creativity in recipe development, strong communication, ability to work under pressure, and passion for quality food
Physical Requirements
  • Ability to lift and carry up to 50 pounds.

  • Ability to stand and walk for extended periods.

  • Ability to bend, reach, lift, and squat throughout the shift.

  • Ability to safely operate commercial kitchen and pasta-production equipment.
