The Grand Galvez, the iconic beachfront luxury hotel known as the Queen of the Gulf, is seeking an experienced and passionate Chef de Cuisine to lead the culinary operations of Monarch Coastal Brasserie.
Monarch is a chef-driven coastal brasserie inspired by the flavors of the Mediterranean and the timeless techniques of French cuisine. Our menu highlights fresh Gulf seafood, seasonal ingredients, handcrafted pastas, premium steaks, and elevated hospitality while delivering an unforgettable dining experience.
The Chef de Cuisine will oversee all day-to-day kitchen operations, ensuring exceptional food quality, consistency, cleanliness, team development, and financial performance. This leader will work closely with the Executive Chef and Food & Beverage leadership team to continue building Monarch into one of the premier dining destinations on the Texas Gulf Coast.
Essential Responsibilities
  • Lead all daily culinary operations of Monarch Coastal Brasserie.
  • Maintain the highest standards of food quality, presentation, consistency, and execution.
  • Supervise, coach, mentor, and develop all culinary team members.
  • Foster a culture of professionalism, accountability, teamwork, and continuous improvement.
  • Collaborate with the Executive Chef to execute seasonal menus, daily features, and special events.
  • Ensure recipe adherence, portion control, and cost management.
  • Maintain compliance with all local health department regulations, food safety standards, and sanitation procedures.
  • Ensure exceptional kitchen cleanliness, organization, and operational efficiency.
  • Conduct routine line checks and quality assurance inspections.
  • Train and mentor Sous Chefs, Line Cooks, Prep Cooks, and Stewards.
  • Support banquet, catering, holiday, and special event culinary operations as needed.
  • Partner with Food & Beverage leadership to enhance the guest experience and drive restaurant performance.
  • Promote a positive, respectful, and team-oriented work environment while maintaining Marriott and Grand Galvez service standards.
