The Meat Science Laboratory Technician, under general supervision, oversees the processing of beef, pork, and lamb carcasses and maintains the sanitation of the Meat Laboratory.

This position is funded by a grant or restricted funds. Continued employment is contingent on the renewal of grant or restricted funds.

The salary is determined in accordance with the University's compensation structure and will be commensurate with the candidates' education and experience, within the assigned salary range for this position.

Responsibilities

  • Assist in maintaining HACCP, SOPs and food safety records. Assist with demonstrations in labs for teaching, research and extension programs.

  • Maintain equipment and facilities. Distribute all meat items (packaging, storing, shipping, etc.).

  • Fabricate carcasses into roasts, chops, steaks and other standard cuts. Process carcasses from slaughter to cooler. Make sausages, ground meats, cutlets, value-added products and cured and smoked products.

  • Assist with demonstrations in labs for teaching, research and extension programs.

  • Performs other duties as assigned.

Required Education and Experience:

  • High School diploma or equivalent combination of education and experience.

  • Five years of related experience in the meat industry.

Required Knowledge, Skills, and Abilities:

  • Knowledge of Hazard Analysis and Critical Control Points (HACCP) and Food Safety and Inspection Service (FSIS) procedures.

  • Ability to multitask and work cooperatively with others.

  • Ability to harvest and process beef, lamb, and pork.

Preferred Qualifications:

  • Bachelor's degree in Animal or Food Science or closely related field

  • Six years of related experience in the meat industry

  • Previous university meat production facility experience or meats judging experience is a plus
