Job description

The Fine Dining Assistant Manager supports day-to-day operations across multiple fine dining venues, ensuring service excellence, operational consistency, and administrative accuracy. This role partners closely with General Managers, Executive Chefs, and FOH leaders to manage scheduling, payroll/timekeeping, reservations, event coordination, and compliance. The ideal candidate thrives in a fast-paced, luxury service environment and brings exceptional organization, communication, and cross-venue coordination skills.

  • 3+ years in fine dining, luxury hospitality, or multi-unit restaurant operations, with administrative or supervisory experience.
  • Proficiency with POS (e.g., Toast/Micros), reservations platforms, and scheduling/payroll tools 
  • Strong Excel/Google Sheets skills impeccable attention to detail, and excellent written/verbal communication.
  • Ability to work nights/weekends/holidays and travel between venues.
  • Experience supporting private dining/events and wine program administration.
  • Knowledge of food safety and alcohol service guidelines (e.g., ServSafe, TIPS).
  • Previous multi-site oversight within a luxury hotel, resort, or casino environment.

  • On-time event execution (BEO accuracy, deposit tracking, post-event reconciliation)
  • Compliance readiness (audit scores, incident reporting timeliness)
  • Serve as the point of contact for 3 fine dining outlets; 
  • Coordinate cross-venue communication, ensuring consistent SOP execution, menu updates, and service standards alignment.
  • Build and publish weekly FOH schedules across venues; balance coverage, forecast demand, and manage swaps/changes.
  • Oversee reservations and floor plan optimization (e.g., OpenTable/Resy/SevenRooms); manage high-priority bookings and VIP notes.
  • Support private dining and event administration: proposals, BEOs, deposits, timelines, vendor coordination, and post-event reconciliation.
  • Monitor guest feedback, resolve escalations, and report trends with actionable improvements.
  • Support weekly invoice processing, petty cash logs, and reconciliation; track comps/voids/discounts with appropriate approvals.
  • Assist with inventory counts and data entry (wine, spirits, china/flatware, linens); coordinate smallwares orders and vendor communications.
  • Maintain up-to-date health & safety documentation, checklists, and inspection readiness; log incident/accident reports.
  • Ensure adherence to alcohol service laws, food safety, and company policies across all venues.
  • Onboard new hires to POS, reservations, scheduling, and SOPs; deliver refresher training and quick tips.
  • Act as an admin for POS, reservations, and scheduling systems; manage user access and troubleshoot issues with vendors/IT.
