Overview of the role

The Kitchen Supervisor is responsible for supporting the daily operations of the kitchen and assisting in the preparation and execution of high-quality food across all Food & Beverage outlets. This role ensures that culinary standards are consistently upheld in accordance with Autograph Collection brand standards and under the franchise of Mainsail Lodging & Development. The Kitchen Supervisor assists with supervising kitchen staff, food preparation, sanitation, and service execution while maintaining a safe, efficient, and professional kitchen environment.

What you have

  • High School Diploma or GED required. Culinary training or coursework is preferred but not required.
  • Minimum one (1) year of experience working in a professional kitchen, preferably in a hotel or fine dining restaurant.
  • Basic knowledge of kitchen equipment, food safety, and sanitation standards.
  • Previous culinary kitchen experience preferred
  • Supervisory or lead experience preferred
  • Strong organizational and multitasking skills, with attention to detail.
  • Ability to work efficiently and effectively under pressure
  • Commitment to food quality, safety, and cleanliness
  • Ability to work in a fast-paced environment while maintaining a calm demeanor

What you'll do

Leadership & Kitchen Operations

  • Assist with the day-to-day supervision and coordination of kitchen staff
  • Support chefs in maintaining efficient kitchen workflow and operations
  • Assist with expediting and directing the flow of service from kitchen to dining areas
  • Demonstrate leadership by setting a positive example and supporting team morale
  • Communicate effectively with culinary and service teams regarding orders and service needs
  • Maintain a sense of ownership and accountability for kitchen and restaurant performance

Food Preparation & Culinary Execution

  • Perform basic and advanced food preparation, including:
    • Vegetable preparation (peeling, slicing, dicing, portioning)
    • Sauce and stock preparation, including vinaigrettes, emulsifications, and dressings
    • Butchering and fabrication of poultry, fish, and primal cuts of meat
  • Execute line cooking duties under the supervision of the Chef
  • Plate and present dishes according to chef and brand specifications
  • Assist with demonstration cooking for guest chefs, events, and presentations
  • Ensure consistent quality, taste, and presentation of all food items
  • Maintain knowledge of recipes, cooking techniques, and kitchen equipment

Sanitation, Safety & Compliance

  • Follow all ServSafe and food safety standards at all times
  • Adhere to proper handwashing and personal hygiene procedures
  • Maintain compliance with knife safety and general kitchen safety procedures
  • Clean and sanitize kitchen areas, including:
    • Equipment, floors, walls, coolers, and freezers
    • Dishwashing and proper storage of clean dishes, flatware, and cookware
  • Sweep, scrub, and mop floors; wipe down surfaces and equipment
  • Sort and remove trash, clean garbage cans, and maintain trash and loading areas
  • Ensure kitchen work areas are clean, organized, and properly stocked

Inventory, Stocking & Receiving

  • Stock kitchen supplies in designated storage areas
  • Maintain organized storage areas for food and equipment
  • Assist with loading and unloading food deliveries and supplies
  • Monitor cleanliness and orderliness of storage and prep areas

Guest Service & Hotel Performance

  • Support the delivery of exceptional guest experiences
  • Assist in maintaining high Guest Satisfaction Scores (GSS) in alignment with Marriott standards
  • Uphold Autograph Collection and Mainsail service and quality expectations

Physical Demand
