Overview

This position is an integral part of the culinary team by ensuring the sanitation of all culinary areas. The kitchen steward will support the culinary team by ensuring clean equipment is available throughout service and all items for banquet events are prepared and organized.

Responsibilities
  • Load dishwasher with dirty dishes as needed.
  • Make sure that the dishwasher machine is cleaning properly.
  • Keep and maintain a clean workstation at all times.
  • Make sure that the dishes are clean and sanitized.
  • Most know the size and the name of the China, silver ware and glassware.
  • Sweep and mop kitchen as needed.
  • Clean walls as needed.
  • Maintain a high level of training for equipment cleaning.
  • Empty all the garbage cans to the dumpster at the loading dock.
  • Clean the drains.
  • Clean the decks of restaurants.
  • Clean the loading dock.
  • Clean the fish file.
  • Clean the tilt skillet.
  • Bus the plates, glasses and silver ware of every event.
  • Help with the plate ups.
  • Comply with health codes standards on the 3 compartment sink set up and break down.
  • Make sure all chemical locations are full, clean and tested for correct PPM (parts per million) using the proper test strips provided.
  • Proper storage, re-filling, label and dating, and calibration of chemicals in all chemical locations.
  • Educated in the proper use of chemicals for the correct job.
  • Oversee mop stations set up in all mop stations locations to the standard provided by the Executive Chef.
  • Support the culinary team by ensuring clean equipment is available throughout service.
  • Review banquet event order and accurately set up all required china, glassware, silverware, serving equipment, and smallware's for banquets functions.
  • Ensure all items are organized and delivered on time.

  • High school diploma or equivalent.
  • Experience in cleaning kitchens.
  • Experience working with chemicals
  • Knowledge of kitchen machinery.
  • Flexible schedule, including evenings, weekends, and holidays.

Specific vision abilities required by this job include close vision, distance vision, peripheral vision, depth perceptions and the ability to adjust focus.
  • While performing the duties of this job, the employee will be exposed to an indoor working environment and the noise level in the workplace is usually moderate.
