Opening this Fall, Mottai Miami is a modern Japanese restaurant in the heart of Coral Gables.
We are seeking an experienced and skilled Sushi Chef to lead our sushi program and support the daily culinary operations of our upscale restaurant. This is a key leadership role that combines technical mastery, creativity, and discipline. You'll be responsible for delivering precise, beautifully composed dishes that reflect the integrity of Japanese tradition while meeting the demands of a high-volume, fine dining environment.
Who We're Looking For
  • Minimum 5 years of experience in a sushi chef role in an upscale or fine dining setting
  • Experience balancing high-volume output with precision and elegant presentation
  • Strong leadership and communication skills in English
  • Calm, organized, and detail-oriented under pressure
  • Proficiency in modern kitchen systems, inventory control, and prep management
  • Familiarity managing a hot kitchen program is a plus
  • Experience conducting omakase service is a strong plus
  • Culinary degree or formal Japanese culinary training is a plus
  • Working knowledge of Spanish or another language is a plus
