Position Summary

We are seeking a skilled and detail-oriented Sushi Chef to join our culinary team. This role is responsible for preparing high-quality sushi and Japanese-inspired dishes while maintaining exceptional standards of cleanliness, consistency, and presentation. The ideal candidate has a strong understanding of traditional sushi techniques, a passion for hospitality, and thrives in a fast-paced, team-driven environment.

Key Responsibilities
  • Prepare sushi, sashimi, nigiri, rolls, and other Japanese dishes with precision and consistency

  • Ensure all fish and ingredients are handled, stored, and prepared according to food safety standards

  • Maintain proper knife skills and uphold traditional sushi preparation techniques

  • Assist in daily fish breakdown, portioning, and inventory management

  • Maintain a clean, organized, and sanitary workstation at all times

  • Collaborate with kitchen leadership on menu development, specials, seasonal offerings, food cost, ordering, etc.

  • Monitor product quality and communicate any inconsistencies or issues to leadership

  • Uphold brand standards for presentation, plating, and guest experience

  • Support overall kitchen operations as needed, including prep and service across stations

  • Maintain awareness of par levels and assist with ordering

Qualifications
  • 1+ years of experience as a Sushi Chef or in a Japanese kitchen preferred

  • Strong knowledge of sushi preparation, fish handling, and knife skills

  • Understanding of food safety and sanitation standards (ServSafe certification preferred)

  • Ability to work efficiently in a high-volume, fast-paced environment

  • Strong attention to detail and commitment to quality

  • Team-oriented mindset with clear communication skills

  • Availability to work nights, weekends, and holidays

Physical Requirements
  • Ability to stand for extended periods of time

  • Ability to lift and carry up to 50 lbs

  • Comfortable working in a fast-paced kitchen environment
