Job description

The Bartender – Good Times Café is responsible for preparing and serving alcoholic and non-alcoholic beverages, as well as providing efficient and friendly food service to guests in a high-volume dining and bar environment. This position ensures consistent product quality, accurate order handling, and adherence to alcohol and food safety regulations while maintaining a clean, organized, and welcoming atmosphere. The role plays a key part in creating a positive dining and beverage experience for all guests through professional, attentive, and courteous service.

ESSENTIAL DUTIES AND RESPONSIBILITIES:

  • Prepares and serves a full range of alcoholic and non-alcoholic beverages — including mixed drinks, cocktails, beer, wine, and specialty beverages — for guests and service staff with speed, accuracy, and consistency in accordance with standardized recipes.
  • Takes accurate food and beverage orders from guests and enters them into the POS system promptly to ensure timely preparation and delivery.
  • Draws draft beer and pours bottled or canned selections with proper portion control and presentation standards.
  • Engages with guests in a courteous, professional, and welcoming manner, delivering prompt, friendly, and attentive service to ensure exceptional guest experience.
  • Maintains thorough knowledge of the beverage and food menus, including ingredients, preparation methods, and presentation standards, to provide informed recommendations to guests.
  • Accurately processes guest payments using the POS system, handling cash, credit cards, comps, and vouchers in accordance with established policies and procedures.
  • Presents, delivers, and retrieves guest checks promptly, ensuring accuracy, accountability, and professionalism in all transactions.
  • Maintains cleanliness, organization, and sanitation of the bar area at all times — including counters, tools, glassware, and equipment — in compliance with health, safety, and sanitation standards.
  • Monitors, organizes, and restocks bar inventory and supplies throughout the shift; conducts routine inventory checks and communicates ordering needs to management.
  • Organizes and maintains a fully stocked, efficient, and visually appealing workstation to support smooth bar operations.
  • Communicates and coordinates effectively with servers, kitchen staff, and management to ensure timely preparation and delivery of beverages and guest satisfaction.
  • Adheres to all health, sanitation, and safety procedures, including knowledge of emergency protocols to maintain a secure work environment.
  • Performs opening, side work, and closing duties as assigned to maintain operational efficiency.
  • Verifies guest identification to ensure compliance with alcohol service laws and adheres to all ABC regulations, RBS training standards, and internal policies.
  • Performs other job-related duties as assigned to support overall departmental success.

SUPERVISORY RESPONSIBILITIES:
This position does not have direct supervisory responsibilities but may provide guidance or support to other team members.

QUALIFICATIONS:

  • Excellent verbal communication and interpersonal skills.
  • High level of guest service orientation and the ability to work effectively under pressure.
  • Must be professional, well-groomed, and able to work in a fast-paced environment.
  • Previous high-volume bartending experience required.

EDUCATION and/or EXPERIENCE:

  • High school diploma or equivalent preferred.
  • Completion of bartending school or formal hospitality training is preferred.
  • Food Safety Manager Certification and Responsible Beverage Service Certification required or must be obtained upon hire.
  • Minimum of 1–2 years of bartending experience in a high-volume casual or fast-paced dining environment.
  • Knowledge of drink preparation, beer and wine service, and basic mixology techniques.
  • Experience operating POS systems, handling cash, and maintaining bar cleanliness and inventory.
  • Excellent customer service and communication skills with the ability to work efficiently under pressure.

LICENSES, CERTIFICATES, REGISTRATIONS:

Must have successfully completed a background check and obtained a gaming license issued by the Morongo Gaming Agency, as required.

LANGUAGE SKILLS:

Must be able to read and interpret documents in English, such as instructions, guidelines, policies, and procedures. Must also be able to communicate clearly and effectively with team members, management, and guests.

PHYSICAL DEMANDS:

  • Lifting and Carrying: Frequently lifts and carries cases of beverages, kegs, ice buckets, and bar equipment weighing up to 50 pounds; may require lifting above shoulder level when restocking or setting up bar stations.
  • Manual Dexterity: Constantly uses hands and fingers to pour drinks, handle glassware, open bottles, operate beverage dispensers, and complete transactions with precision and efficiency.
  • Mobility: Continuously moves behind the bar and throughout service areas; requires standing, walking, bending, and reaching for extended periods during service.
  • Stationary Work: Rarely seated; position requires prolonged standing while mixing and serving beverages and interacting with guests.
  • Tool Operation: Frequent use of beverage dispensers, blenders, ice machines, cash/POS systems, bottle openers, and other standard bar tools.
  • Visual Acuity: Requires close vision to prepare drinks accurately, read IDs, handle transactions, and monitor guest behavior for responsible alcohol service.
  • Working Conditions: Routinely works in fast-paced bar environments with exposure to loud noise, variable lighting, crowded spaces, and slippery floors. Regular exposure to a smoking environment while transitioning through casino or public areas.

WORK ENVIRONMENT:

This is a dynamic, fast-paced environment that requires the ability to adapt and perform under pressure. The casino operates with moderate to loud noise levels and is a smoking environment, requiring team members to work comfortably in these conditions.

WORKING HOURS:

Morongo Casino Resort & Spa operates 24 hours a day, 365 days a year; therefore, flexibility in scheduling is essential. Team members must be available to work shifts that may include evenings, weekends, holidays, and special events. Schedules are subject to change based on business needs and may include overtime, as well as work on both weekdays and weekends.
