Job description

Laguna Development Corporation is seeking a passionate and experienced Chef de Cuisine to lead culinary operations in our premier food & beverage environment at the Route 66 Casino.
This role is ideal for a skilled culinary professional who thrives on creativity, leadership, and excellence in execution. You will oversee kitchen operations, ensure adherence to health and safety standards, manage food and labor costs, and guide your team in delivering consistently high-quality dishes. The Chef de Cuisine is also responsible for staff development, scheduling, inventory management, and maintaining the highest standards of sanitation and guest service.

The ideal candidate will have a bachelor’s degree (or equivalent experience), 5+ years of food production management, and a strong background in cost control and culinary leadership. A Serv-Safe certification is required. Proficiency in kitchen operations, team supervision, and basic computer skills (Word, Excel, Outlook) is essential. This is a hands-on leadership role requiring flexibility, professionalism, and a genuine commitment to creating an exceptional dining experience. Must be able to pass a pre-employment drug/alcohol screening and maintain a valid New Mexico driver’s license.
