Job description

JOB DESCRIPTION:
The Assistant Executive Steward is responsible for ensuring all kitchen and bar areas adhere to the state and federal health, sanitation and food service regulations.  This position will manage the culinary and non-culinary team members, including but not limited to stewarding managers, kitchen workers, utility porters, etc.  The Assistant Executive Steward will report directly to the Executive Steward.

  • Regularly walking the floor interacting with staff and all support departments.
  • Continually strive to develop the stewarding team in all areas of managerial and professional development.
  • Supervises assigned operation functions within the department.
  • Supervises assigned staff to include hiring.
  • Provides ideas and suggestions.
  • Hires, trains, and disciplines steward employees and documents all actions taken.
  • Ensures proper scheduling of employees- schedules vacation and time off.
  • Makes routine inspections of all equipment and kitchen areas to ensure that cleanliness and sanitary procedures are maintained and that all equipment is in proper mechanical worker order.
  • Ensures all sanitation regulations are followed and the proper maintenance of food, food storage and preparation devices are in compliance with health code standards.
  • Directs staff in the cleaning and maintenance of dishware, food preparation areas and dining areas.
  • Requisitions new and replacement equipment as needed.
  • Maintains the inventory and record keeping for all dinnerware, flatware and glassware- orders all china, glass and silverware.
  • Promotes a positive work environment, teamwork and employee satisfaction.
  • Works closely with all departments to foster positive SAHARA Las Vegas culture.

Desired Qualifications:
  • Three to five (3-5) years of experience with Culinary Unions, Collective Bargaining Agreements, Legal requirements and compliance with Company policies.
  • One to two (1-2) years of experience in a supervisory role in a kitchen environment; handling chemicals and cleaning materials, and maintaining various types of equipment.
  • Must be able to analyze P&Ls, create budgets, schedules and control inventory.
  • Must monitor labor and expense cost controls for department.
  • Bi-lingual in Spanish is a plus.
  • Must be able to obtain all necessary work cards.
  • Must have strong leadership skills and the ability to mentor a team.
  • Must have excellent organizational skills, ability to function under time constraints and meet deadlines with attention to detail.
  • Must be able to work in a fast-paced, customer service-driven environment.
  • Must have strong interpersonal and communication skills.
  • Must have working knowledge of Microsoft Office Suite (Excel, Word, and Outlook) and timekeeping.
  • Must have professional demeanor and appearance.
  • Able to work varied shifts, including weekends and holidays.
