The Pastry Cook 3 ensures the highest quality preparation and presentation of fine pastries for banquets and special parties.

Essential Duties & Responsibilities:
  • Knows models and integrates Pebble Beach Company culture (Mission, Values, and Standards).
  • Prepare all necessary menu items, as directed by the Pastry Chef/ Pastry Chef Sous Chef.
  • Keep recipe and setup documentation.
  • Follow recipe cards exactly.
  • Discuss daily events and production schedule with the Pastry Chef.
  • Check the quality of food produced in the kitchen, ensuring consistency, quality and completion of each mise en place.
  • Assist with dish up in pastry shop for banquets and service including the daily pastry orders, including any outstanding orders for the following day.
  • Contribute a list of needed items to the daily food order with the approval of the Pastry Chef.
  • Help all other cooks and all other lines as needed, contributing to an environment of teamwork.
  • Assist with special events as needed.
  • Be cost conscience at all times including controlling waste and spoilage through constant attention to detail.
  • Prepare pastries and baked goods as specified by the Executive Pastry Chef and Executive Chef.
  • Create plate presentations for restaurant and Banquet desserts ensuring an attractive presentation.
  • Report any faulty equipment or unsafe conditions directly to the Kitchen Supervisors.
  • Communicate effectively with staff from both the front and back of the house.
  • Assist Pastry Chef in maintaining sanitation in the pastry shop.
  • Check Banquet boards and all function sheets to ensure proper production.
  • Anticipate and prepare for volume of business, taking into consideration the hotel occupancy, banquets and holidays.
  • Maintain quality and standards established by Executive Pastry Chef and Executive Chef.
  • Comply with all Pebble Beach Company safety, health and sanitation policies and procedures.
  • Understand the basic operational requirements of the following; Deck Ovens, Wood Burning Ovens, Rotating Ovens, Dough Sheeters, Standing Mixers, Blast Chillers, Proof Boxes, Tempering Chocolate, Dough Divider,

Absolutely Required Skills:
  • Proficiency in knife and equipment skills.
  • Knowledge of ingredients and preparation.
  • Minimum 1-2 years' experience preparing pastries at a premier restaurant or resort.
  • Able to operate typical pastry tools and equipment.
  • Food safety certification required.
  • High school diploma or equivalent required.

Desired Skills:
  • Graduate of accredited culinary program or apprenticeship desirable.
