Breakfast Operation

Manage the breakfast operation to include:

  • Ensuring the appropriate breakfast prep and lunch prep is completed for the next day's expected breakfast volume and banquet activity.

  • Communicate with the AM Breakfast Attendants to make sure they are well informed on the day's requirements, timing, etc.

  • Supervise the weekly specialty breakfast item program to ensure maximum guest satisfaction for our week day guests.

Lunch Operation:

Supervise the execution of Banquet Lunches to ensure production guidelines are followed, group time schedules are met and to ensure maximum guest satisfaction and profitability.

Cleanliness:

  • Ensure daily and weekly cleaning schedules are adhered to by the cooks and assign tasks as needed.

  • Assign deep cleaning duties to the AM dishwasher as needed.

Health and Sanitation:

Ensure Ecosure standards are adhered to including:

Daily temperature logs

Receiving logs

Proper Food Labeling to include Expiration Dates

Proper Food Storage Hierarchy.

Working guidelines are followed (Sanitary Buckets, Proper Kitchen Procedures.)

Employee Lunch Program

Supervise and enhance the daily Employee Lunch program to achieve maximum employee satisfaction given the budget restrictions.

  • Prepare weekly and daily menus to ensure variety and ensure the operation is prepared for the following day's lunch, taking into consideration the day's banquet activity and ensuring the best result for employees.

  • Focus on healthy inexpensive items for our lunch program.

Food Ordering

  • Prepare and place food orders as needed using the order guidelines in place.

The Schedule: Enjoy a lifestyle that most chefs dream of! This is primarily an AM shift role. While we'll need your leadership for an occasional PM shift to keep things running smoothly, you'll mostly be home while the rest of the culinary world is just starting their dinner rush
