About the role:
The Sommelier is responsible for overseeing the daily wine program at Florie's, including wine service, inventory management, staff education, guest engagement, and wine list development. This position works closely with restaurant leadership and culinary teams to ensure beverage offerings complement the dining experience while reflecting the philosophy and standards of Florie's. This role is part of the Food & Beverage division and reports to the Director of Restaurants.

What you will do:
  • Lead and oversee all aspects of the Florie's wine program, ensuring exceptional service and guest satisfaction

  • Provide expert wine recommendations and pairings that complement the culinary experience

  • Describe menu offerings, wine selections, and beverage pairings through engaging and detailed guest interactions

  • Build relationships with guests while anticipating preferences and creating personalized experiences

  • Manage and maintain wine inventory, cellar organization, and stock levels for Florie's restaurant and lounge operations

  • Complete wine ordering and collaborate with vendors, suppliers, and distributors to maintain an exceptional wine collection

  • Assist in developing and refining wine lists that align with Florie's culinary vision, guest preferences, and business objectives

  • Conduct wine tastings, educational experiences, and special events for guests

  • Lead wine education and training programs for restaurant and Food & Beverage teams

  • Ensure proper wine storage, handling, service temperatures, decanting procedures, and glassware standards

  • Collaborate with culinary leadership to develop food and wine pairing experiences

  • Monitor beverage sales performance and identify opportunities to drive revenue growth

  • Support operational leadership in maintaining outlet standards, service execution, and guest experience initiatives

  • Assist with reporting, inventory controls, procurement systems, and beverage-related administrative functions

  • Participate in regular operational meetings and contribute to ongoing service and product enhancements

What you bring:
  • Sommelier certification required (Court of Master Sommeliers, WSET, or equivalent)

  • Previous experience as a Sommelier, Assistant Sommelier, or beverage leader in a luxury hotel, fine dining restaurant, or Michelin-recognized environment preferred

  • Strong knowledge of wine history, viticulture, vinification, sensory evaluation, wine service, and beverage laws

  • Comprehensive knowledge of food and wine pairing principles

  • Strong leadership, coaching, and employee development skills

  • Experience managing wine inventories, purchasing, and vendor relationships

  • Excellent communication, presentation, and guest engagement skills

  • Strong business acumen with an understanding of sales, inventory management, and profitability

  • Proficiency with Microsoft Office, POS systems, inventory systems, and procurement platforms

  • Ability to read, write, and communicate effectively in English
