Screaming Tuna is an award‑winning Sushi & Asian Bistro nestled along the Milwaukee Riverwalk, renowned for our sustainable seafood, inventive menu (including sushi, short ribs, vegan and gluten‑free options), and scenic riverside bar with world‑class sake, local beer, craft cocktails, and wines .

We proudly partner with Monterey Bay Aquarium Seafood Watch—Wisconsin’s first and only—to ensure responsibly sourced, well‑managed seafood .

Position Summary:

As a Hot Line Chef for Team Tuna, you will play a pivotal role in our kitchen, responsible for cooking and plating hot‐food items beyond sushi. You’ll work closely with sushi chefs, prep staff, and management to deliver consistently excellent dishes under a high-volume, fast-paced environment.

Key Responsibilities:
  • Prepare and cook hot menu items (e.g. short ribs, stir‑fry, soups, rice dishes, and hot tapas)

  • Maintain cooking stations and support line efficiency during service

  • Plate and present dishes in a visually appealing, standardized format

  • Collaborate with team members to ensure timely, quality service

  • Follow all food safety, sanitation, and Seafood Watch sourcing standards

  • Support cross-training across other kitchen roles if desired

Qualifications:
  • Proven experience as a hot line cook in a high-volume, fine-dining, or upscale casual restaurant

  • Strong technical skills and knowledge of hot‑food preparation

  • Ability to work evenings, flexible shifts including weekends and holidays

  • Passion for sustainable seafood, creativity, and consistent quality

  • Excellent communication and team-oriented mindset

  • Willingness to cross‑train in sushi or other kitchen positions (optional)
