Culinary Excellence & Innovation
  • Menu Design: Crafting diverse, seasonal banquet menus that cater to high-end weddings, corporate galas, and private functions.
  • Quality Control: Ensuring every plate-whether the 1st or the 500th-meets the rigorous 5-star standards of presentation, temperature, and flavor.
  • Customization: Working closely with the Events and Sales teams to create bespoke dining experiences based on specific guest requirements and dietary restrictions.

Operational Leadership
  • Production Planning: Managing complex production schedules (prep lists, "pull" sheets, and banquet event orders) to ensure seamless execution.
  • Cost Management: Overseeing food costs, labor budgets, and inventory to maximize profitability without compromising quality.
  • Staff Mentorship: Leading a large brigade of sous chefs, line cooks, and stewards, fostering a culture of professional growth and high performance.

Food Safety & Compliance
  • HACCP Standards: Maintaining impeccable kitchen hygiene and strictly adhering to local and international food safety regulations.
  • Equipment Maintenance: Overseeing the care and operation of high-volume kitchen equipment.
