About the Role
The Cook II is responsible for independently preparing and cooking large quantities of food in a high-volume dining facility, ensuring quality, consistency, and strict adherence to food safety and sanitation standards.
What You'll Be Doing
  • Prepare and cook large quantities of food independently using a variety of methods in accordance with Army recipes and local menu plans.
  • Ensure proper portion control, plating, and presentation standards are maintained.
  • Operate, clean, and maintain kitchen equipment safely and efficiently.
  • Demonstrate strong customer service skills and greet guests in a friendly, professional manner.
  • Maintain accurate temperature logs and ensure proper food storage, labeling, and rotation.
  • Complete all side work, setup, and breakdown duties as assigned.

What We're Looking For
  • A minimum of two (2) years of prior cooking experience in a full-service restaurant preferred.
  • Ability to maintain a valid ServSafe certification.
  • Experience in a military kitchen (DFAC) preferred.
  • Must satisfactorily complete Food Service Medical Clearance (Tri Service Food Code - TB Med 530).
  • Ability to obtain an interim Secret Clearance prior to start.
  • Possess a valid state driver's license and a safe driving record to operate vehicles or equipment as required for the position.
  • All candidates must successfully complete pre-employment screening including a comprehensive background check, motor vehicle record review, and a 5-panel drug test.

Physical Demands & Work Environment
  • Fast-paced commercial kitchen environment with exposure to heat, noise, sharp tools, and cleaning chemicals; requires strict adherence to food safety and sanitation standards.
  • Ability to lift up to 50 pounds and perform physical activities such as pushing, pulling, carrying, stooping, bending, squatting, standing, and reaching for extended periods.
  • Must be available to work on-call, alternate, and extended shifts as needed to support mission requirements, including nights, weekends, and holidays.
  • Employees may be required to remain on-site for extended periods during scheduled exercises or real-world events (e.g., 24-hour lockdowns) to meet contractual obligations.
