Job description

Director of Hospitality Operations

We are seeking an experienced, hands-on Director of Hospitality Operations to lead and elevate our multi-revenue hospitality business. The restaurant, brewery and event space is on the marina in beautiful, picturesque downtown Port Washinton, only a 30-minute commute from Milwaukee, West Bend and Sheboygan regions.

This is not a traditional restaurant management role. Our venue is a complex ecosystem encompassing a busy full-service restaurant, a dedicated event hall, a craft brewery, and a growing catering operation. A separately leased tenant space is included within the facility responsibilities.

The ideal leader will bring a sophisticated understanding of cross-departmental operations, multi-margin financial management, and seasonal business stabilization. You will hold total operational and P&L accountability, tasked with building standard operating procedures (SOPs), driving labor efficiencies, and fostering a collaborative, high-performance culture across all departments.

Key Responsibilities

  • Establish and monitor guest satisfaction standards across restaurant, brewery, events, and catering operations. Track online reviews, guest feedback, service recovery efforts, and reputation metrics to ensure exceptional hospitality experiences.
  • With ownership, oversee budgeting, forecasting, and financial performance across four distinct revenue streams: restaurant, event hall, brewery, and catering.
  • Develop pricing, promotion, event packaging, beverage strategies, catering and seasonal programming to maximize revenue, occupancy, average guest spend, and year-round profitability. Drive cross-promotional strategies to maximize property utilization, balancing restaurant traffic and catering with profitable private event bookings.
  • Implement strict controls for food cost, beverage pour cost (including beer production margins), labor percentages, and event operating expenses. This includes facility management.
  • Implement, and enforce comprehensive SOPs for front-of-house (FOH), back-of-house (BOH), event and catering execution, and facility management to ensure consistent guest experiences. Use current and future technologies to manage and profitably grow the business as a whole.
  • Masterfully manage shared resources (e.g., maximizing kitchen staff efficiency to seamlessly serve both the restaurant dining room and a 250+-person banquet simultaneously).
  • Oversee relationships with local suppliers, distributors, and contractors. Maintain facility standards across the production space, dining areas, and private venues.
  • Foster a professional, welcoming, safe, clean and high-energy work environment built on mutual respect, open communication and continuous improvement.
  • Recruit, onboard, and continuously train department managers and leaders (Kitchen Leadership, Event/Catering Coordinators, and Taproom Staff). Emphasize building and maintaining relationships: staff to staff, staff to customers and management team to the community.
  • Set clear KPI targets for team leaders and conduct structured performance evaluations to build a robust leadership pipeline. Focus on continuous improvement within the operation, both with staff and with outside suppliers.
  • Collaborate with brewery leadership to ensure production planning, inventory controls, quality standards, regulatory compliance, and profitable draft and packaged beer programs.
  • Work closely with the events team to ensure weddings, corporate functions, and community gatherings are executed with flawless hospitality.
  • Lead and guide the marketing and brand management efforts of the Events and Marketing Manager, providing insight and direction so as to maximize the impact, reach and effectiveness of marketing dollars spent.
  • Together with the management team, serve as a visible leader within the Port Washington regional community by developing relationships with tourism organizations, chambers of commerce, nonprofit partners, local businesses, and community groups.

Qualifications & Experience

  • Minimum of 5+ years of progressive leadership experience as a General Manager, Director, or Complex Manager in a high-volume, multi-unit or multi-revenue hospitality environment (e.g. restaurants, hotels, conference centers, banquets, brewpubs, or large-scale event venues).

o Demonstrated experience creating operational infrastructure, training manuals, and accountability systems from the ground up. Proficiency with hospitality technology platforms including POS systems, labor scheduling software, event management platforms, reservation systems, inventory management systems, and reporting dashboards.

o Ability to work on a schedule dictated by the needs of a multi-faceted seasonal business, including weekends, evenings, and major event dates.
