Job Summary

Lead Steward of Ownership Kitchen at Tropicana Field

Position Summary:   The Lead Steward is responsible for overseeing steward operations and ensuring the cleanliness, sanitation, and organization of the Ownership Kitchen. This hands-on role leads the stewarding staff, maintains health and safety standards, supports food and beverage operations, and helps ensure a safe, efficient, and productive work environment.  
Essential Duties and Responsibilities:

  • Lead and oversee daily stewarding activities in the Ownership Kitchen while actively participating in daily stewarding duties as operationally needed.
  • Perform and support daily dishwashing operations, including washing, sanitizing, drying, organizing, and properly storing china, glassware, platters, utensils, cookware, and kitchen equipment.
  • Maintain adequate inventory of cleaning supplies, chemicals, and stewarding equipment, and communicate replenishment needs to leadership in a timely manner.
  • Ensure proper handling, storage, organization, and inventory of kitchen equipment, Platters, China, glassware, and utensils.
  • Partner with the Lead Runner to ensure the daily polishing schedule is completed and that all required China, glassware, and other service items are polished, organized, and ready for service.
  • Ensure Gelato Cart machines are cleaned and maintained according to the established cleaning schedule and procedures.
  • Partner with the Ownership Kitchen Executive Chef to establish, maintain, and execute the overall kitchen cleaning schedule.
  • Ensure compliance with all food safety, sanitation, and workplace safety regulations.
  • Maintain required temperatures and chemical levels according to established standards.
  • Partners with all Ownership Kitchen Chefs, Cooks, The Food Safety and Sanitation Manager, the Stewarding Manager and the General Manager for all service needs and flow.
  • Perform other duties as assigned.
