THE POSITION

Calgary Sports and Entertainment Corporation is seeking a Chef de Partie for the Concessions Department. As a Chef de Partie you will report to the culinary management team, and will be responsible for tasks that focus on the day to day activities in the Kitchen stands. Performing as lead cook , assist Sous Chefโ€™s and Chefโ€™s in all areas of the kitchen including food production waste control, standards and kitchen sanitation.

KEY ACCOUNTABILITIESย 

  • Successful candidates must be able to work shifts at both the Scotiabank Saddledome and McMahon Stadium based on operational needs.
  • Station operation, serving and preparing products in accordance to specifications or delegation to tasks of the Chefโ€™s;
  • Ability to supervise more than one area at a timeย 
  • Oversee the daily operations, production and preparation of culinary items, ensures area(s) is operational at opening time/service time;
  • Ensure that all production required is up to date prior to days off and that a task list is left for the next shift;
  • Opens and closes kitchen shifts and ensures completion of assigned duties;
  • Takes an active role in the production of new menus and Menu Features;
  • Supervises associates to ensure that guest service, operational needs and financial objectives are met;
  • Actively supports daily cleaning and ensures associates follow daily cleaning routines and keep their work areas clean and sanitary throughout their shift;
  • Understanding of Restaurant and/or Event Productions;
  • Have a good understanding of food cost and waste control;
  • Good customer and associate relation skills;
  • Good communication skills (verbal, listening, writing);
  • Strong organization skills;
  • Knowledge of governmental regulations and safety standards (MSDS);
  • Adhere to all company policies and programs as required;
  • Compliance with all safety regulations of assigned tasks, and ensure a clean and safe working environment;
  • Actively participate in safety programs and follow polices;
  • Other duties as assigned.ย 

THE INDIVIDUAL

The ideal candidate will have the following background:ย 

  • 3-5 Years Hotel/Restaurant experience as a 1st cook or completion of a culinary apprenticeship program, with all round knowledge of the kitchen operation;
  • High School Diploma or equivalent required;
  • Culinary Education Trade papers;
  • Food Safety & Sanitation Certificate;
  • Valid Alberta Basic Food Safety Certification;
  • Related work experience;
  • Leadership experience;
  • A positive attitude and eye for detail and appearance

Please note, this position is based on the event schedule in a fast paced environment, with emphasis on evenings, weekends, and statutory holidays.ย Shift lengths vary, and require flexible working times. ย
