The Cutter is responsible for creating usable portions from the fillets that are provided by the Filleter and meeting the set yield goals. They work to use as much of the fillet as possible for restaurant portions. The Cutter makes up an important part of the production process by making consistently sized and weighted portions for restaurant distribution.

Once hired, you will be trained in your area of expertise to ensure your capability and understanding of safety and sanitation. You will be trained on our plant standards and you will contribute and excel in a team service environment. You will be responsible for following all company standards and guidelines, and performs opening, on-going, and closing side-work duties.

ESSENTIAL QUALIFICATIONS

  • At least 18 years of age
  • Ability to communicate in verbal and written English
  • High School graduate/GED
  • Previous portioning or filleting experience with seafood
  • Knife handling experience
  • A passion for great seafood product
  • Ability to work safely and diligently while maintaining a clean and sanitary work area
  • Ability to compute basic mathematical calculations

ESSENTIAL JOB FUNCTIONS

  • Portion fish from fillet to be distributed to restaurants
  • Track portion yields and weights throughout shift
  • Communicate with Plant Manager regarding product quality discrepancies
  • Work with others in the cutting room and support where needed
  • Ability to lift up to 50 lbs; 15-20 is typical
  • Ability to carry up to 100 feet
  • Ability to reach up to 6 feet; typical is 2-6 feet
