The Rose Gaming Resort is a $480 million gaming and entertainment complex destination, located alongside I-95 in Dumfries, Virginia. Along with exciting gaming action, The Rose Gaming Resort provides a luxury hotel, eight bars and restaurants, a space for meetings and events, 50,000+ square foot gaming space and over 1,650 Historical Horse Racing machines, and over 80 acres of green space. The Rose Gaming Resort generates an estimated $35.5 million in annual tax revenues and employs more than 500 team members.

JOB SUMMARY

Sous Chef is responsible for providing supportive leadership to kitchen staff throughout food service. Their duties include assisting the Executive Chef in monitoring kitchen activities, expediting orders to ensure quality taste, presentation and taking on additional responsibilities in the Executive Chef’s absence to ensure that kitchen staff has proper direction.

ESSENTIAL DUTIES AND RESPONSIBILITIES

Sous Chefs oversees food preparation and cooking. To succeed in this job, a candidate must be able to effectively undertake the following day-to-day duties and responsibilities:

  • Preparing meals and food to meet the specifications of guests in a timely manner.
  • Properly measuring kitchen ingredients and food portions
  • Ensuring kitchen staff adhere to set standards, procedures, department rules and sanitation requirements.
  • Using kitchen knives and equipment such as grills, ovens, steamers, and warmers in food preparation
  • Managing the kitchen inventory and ensuring supplies are fresh and of high quality.
  • Ensuring proper food temperatures when cooking and proper storage afterward
  • Keeping the workstation and kitchen equipment clean, organized, and sanitized
  • Taking charge of kitchen opening, closing and other side duties as directed by the Executive Chef
REQUIRED SKILLS AND ABILITIES

In addition to the other duties described herein, each Team Member has the following responsibilities related to compliance with laws and regulations.

  • Attend required training sessions offered by the Company.
  • Obtain and retain required license(s).
  • Perform the duties described in compliance with local laws and regulations.
  • Take the necessary steps to ensure minors are not allowed to gamble or loiter in gambling areas, drink alcoholic beverages, or purchase tobacco.
  • Have knowledge of the ordinances, regulations, laws, policies, and procedures relating to the Team Member’s department.
  • Have knowledge of the Property’s programs to address problem gaming.
  • Report any acts of wrongdoing of which the Team Member may have knowledge.
EDUCATION AND EXPERIENCE
  • Culinary Degree plus three (3) years of culinary experience, or equivalent experience; or a combination of education and experience may be considered.
  • Experience as manager or supervisor in a high-volume complex hospitality environment strongly preferred.
  • Exceptional cooking skills
  • Ability to effectively manage the kitchen staff, motivate them and assign duties fairly
  • Familiarity with the best practices in the hotel and catering services industry
  • Knowledge of health and safety standards
  • Proficient in Microsoft Office, Point of Sale and restaurant management software
  • Ability to multitask and work quickly under pressure
  • Advanced verbal and written communication skills
  • Attention to detail and organizational skills

 

Certificates, Licenses, and Registrations: Virginia Racing Commission License

     Valid Driver’s License with a minimum of three (3) years driving experience.
